Kimbap Ingredients

  • 2 strips of pork belly (cut lengthwise for easy rolling)
  • 1.5 bowls of fluffy cooked rice
  • 12 pickled perilla leaves
  • Ssamjang (Korean dipping paste), to taste

Rice Seasoning

  • 2 Tbsp perilla oil
  • 2 Tbsp toasted sesame seeds
  • 2 pinches of salt

Cooking Instructions

Step 1

First, prepare the pork belly. Lightly season it with pepper, then pan-fry until golden brown. Place the cooked pork belly on paper towels to drain excess oil for a lighter taste.

Step 1

Step 2

For easier rolling, it’s best to cut the pork belly lengthwise rather than keeping it in whole strips. This will help you roll the kimbap neatly without it falling apart.

Step 2

Step 3

Cook the rice until it’s fluffy. While it’s still warm, mix in 2 Tbsp of perilla oil, 2 Tbsp of toasted sesame seeds, and 2 pinches of salt. The nutty aroma of the perilla oil and the popping texture of the sesame seeds will enhance the rice flavor.

Step 3

Step 4

Place a sheet of seaweed on a bamboo rolling mat. Spread about 4/5 of the rice evenly over the seaweed, leaving a small border at the top. Place a thin line of rice along the very top edge to help seal the roll. Layer 6 pickled perilla leaves on top of the rice. The aromatic perilla leaves will beautifully complement the richness of the pork belly.

Step 4

Step 5

Spread a moderate amount of ssamjang over the pickled perilla leaves. Adjust the quantity to your preference, but don’t be shy – enough ssamjang is key to a delicious flavor combination with the pork belly. Too little can make it taste bland.

Step 5

Step 6

Now, arrange the prepared pork belly strips evenly over the ssamjang. Since we cut the pork belly lengthwise, one strip of pork belly fits nicely into one kimbap roll. Firmly hold the pork belly in place and use the bamboo mat to roll the kimbap tightly. Rolling it firmly ensures that the kimbap holds its shape and doesn’t unravel.

Step 6

Step 7

Your delicious pork belly kimbap is ready! The savory and aromatic pickled perilla leaves perfectly balance the richness of the pork belly. Even with simple ingredients, this kimbap offers a satisfying and hearty bite.

Step 7

Step 8

Finally, serving it with crisp, crunchy chili peppers will further enhance the flavor of your pork belly kimbap. Enjoy this perfect pairing for a complete meal!
