This is a braised pork spare ribs dish made with red wine, similar to roast beef. By marinating the meat for over 8 hours, the meat becomes tenderized, significantly reducing cooking time. It’s also recommended because it stays tender even when cooled. If you have ample time, marinate it for about a day beforehand for even deeper flavor.

Main Ingredients

  • Pork Spare Ribs 850g
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1 King Oyster Mushroom
  • 1/2 Zucchini

Meat Marinade

  • 1/2 Grated Onion (approx. 3 Tbsp)
  • 2 Tbsp Honey
  • 100ml Red Wine
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sugar
  • Pinch of Black Pepper (3 shakes)

For Sautéing Vegetables

  • 10g Butter
  • Pinch of Black Pepper (1 shake)
  • 3 Pinches of Salt

For Braising Meat

  • 2 Tbsp Worcestershire Sauce
  • 2 Tbsp Oyster Sauce
  • 100ml Red Wine
  • 3 Tbsp Mirin (Sweet Rice Wine)
  • 【Garnish】
  • A little Broccoli Sprouts

Cooking Instructions

First, trim any excess fat from the spare ribs with scissors. Rinse the ribs under running water to wash away any bone dust or residue.

Grate the onion finely. In a bowl, combine the grated onion with honey, red wine, soy sauce, minced garlic, sugar, and pepper to create the marinade. Add the spare ribs and toss well to coat. Marinate in the refrigerator for at least 8 hours, or preferably overnight, to tenderize the meat.

Prepare the vegetables: dice the bell peppers, slice the king oyster mushroom, and slice the zucchini. Heat the butter in a pan over medium heat. Add the prepared vegetables and sauté lightly for a few minutes until slightly softened, seasoning with a pinch of salt and pepper. Set the sautéed vegetables aside on a plate.

In the same pan used for the vegetables, add the marinated spare ribs along with any remaining marinade. Pour in the braising liquid ingredients: Worcestershire sauce, oyster sauce, red wine, and mirin. Bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pan with a lid, and simmer for 10 minutes.

After 10 minutes, remove the lid and reduce the heat to low. Continue to braise for another 10 minutes. Finally, uncover the pan, add the sautéed vegetables back in, and spoon the sauce over the ribs as you cook for an additional 3 minutes over low heat until the sauce has slightly thickened and the ribs are glossy. This completes the dish.
