Refreshing and Clean Bean Sprout Soup
Bean Sprout Soup ♡ So Refreshing!^^
Bean sprout soup is a national favorite in Korea! It’s simple yet incredibly delicious. I quickly whipped this up so my 12-month-old baby could eat it with us. ^^
Main Ingredients- 300g fresh bean sprouts (1 bag)
Seasoning & Aromatics- 1 Tbsp salt (adjust to taste)
- 1 Tbsp sesame oil
- 1 stalk green onion (finely chopped)

Cooking Instructions
Step 1
Rinse one bag of fresh bean sprouts thoroughly under running water multiple times. Make sure to wash them carefully to remove any dirt or debris, as this will ensure a clean and clear broth. Place all the washed bean sprouts into a pot.
Step 2
This step is optional, but if you prefer shorter sprouts, use kitchen scissors to cut them into bite-sized pieces, about 4-5 times. This helps prevent the sprouts from tangling in the soup and makes for a neater presentation.
Step 3
Pour about 2 liters (approximately 10 cups) of fresh water into the pot. Using enough water to fully cover the sprouts is key to achieving a refreshing and flavorful soup. Season with salt. Start with 1 tablespoon and adjust later according to your taste. (If cooking for a baby, consider using a very small amount of soy sauce or just a pinch of salt, or simply rely on the natural flavor of the sprouts.)
Step 4
Now, cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and continue to simmer for about 10 minutes. Cook until the bean sprouts are completely tender. A tip for a more refreshing flavor is to avoid lifting the lid too often while simmering.
Step 5
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil. The sesame oil adds a wonderful nutty aroma, enhancing the overall flavor of the bean sprout soup.
Step 6
Finally, garnish generously with the finely chopped green onions that you’ve prepped. The subtle fragrance of the green onions complements the refreshing taste of the bean sprout soup beautifully. Your delicious and revitalizing bean sprout soup is now ready! Enjoy it with a warm bowl of rice.
