  • 2 squids (cleaned)
  • 4-5 cups (800ml-1000ml) Anchovy and kelp broth (or water)
  • 1 handful of green onions (about 10cm length)
  • A little cooking oil

First, wash the Korean radish, peel it, and slice it thinly into uniform, bite-sized pieces (about 0.3cm thick). Thinly sliced radish cooks faster and absorbs the soup’s flavor better.

Rinse the cleaned squid under running water and pat it dry. Cut it into bite-sized pieces (about 2-3cm). Avoid cutting too small, as it will shrink when cooked. Place the sliced radish and squid into a pot. Add 3 tablespoons of perilla oil and stir-fry over medium heat for about 3-4 minutes, until the squid and radish become slightly translucent and release some moisture. This step enhances the savory depth of the soup.

Once the squid and radish are slightly stir-fried, add 1 cup (200ml) of anchovy and kelp broth and 1 tablespoon of minced garlic. Continue to stir-fry together. Adding a small amount of broth at this stage helps deepen the flavors of the ingredients.
