Ingredients

  • 200g fresh oysters
  • 1/2 block soft tofu
  • 10g green onion (about 1/4 stalk)
  • 1 medium onion
  • 1 Tbsp minced garlic
  • 1 tsp soy sauce for soup or salt (to taste)
  • 1 pinch black pepper

Cooking Instructions

Step 1

First, prepare all the ingredients. Slice the green onion diagonally into thin pieces. Thinly slice the onion. Cut the tofu into bite-sized cubes. Gently rinse the oysters under cold running water. Place them in a bowl and add lightly salted water (about 1 Tbsp salt to 1 cup water) and swirl gently to clean. This helps remove any impurities or shell fragments. Drain the cleaned oysters.

Step 1

Step 2

Pour 3 to 4 cups (about 600-800ml) of water into a pot. Add the cubed tofu and the drained oysters. Bring to a boil over high heat. As the oysters and tofu cook, the broth will start to develop its flavor.

Step 2

Step 3

Once the tofu and oysters have cooked slightly and the broth begins to boil, add the sliced onion and green onion. The sweetness from the onion and the fresh aroma from the green onion will enhance the soup’s flavor.

Step 3

Step 4

Now, add 1 tablespoon of minced garlic to enrich the broth with its aromatic flavor.

Step 4

Step 5

Avoid overcooking the oysters and tofu, as they can become mushy or make the broth cloudy. Simmer for just a short while after adding all ingredients (about 3-5 minutes) until everything is heated through and flavors meld. Taste the soup and season with soy sauce for soup or salt as needed. Finally, add a pinch of black pepper. This ensures the soup maintains the oysters’ fresh and clean taste.

Step 5

Step 6

Ladle the finished Oyster and Tofu Soup into individual bowls. Enjoy the comforting warmth, the refreshing broth, and the delightful combination of soft tofu and fresh oysters. This soup makes for a satisfying and healthy meal, especially when served with rice.
