Kkoshiraegi Bibimbap Recipe: A Healthy Choice for Dieting
Seaweed is packed with various nutrients and is known to be beneficial for dieting. Today, we’ve created a delicious bibimbap using kkoshiraegi. This kkoshiraegi bibimbap is easy on digestion, fresh, and wonderfully tasty. Enjoy a healthy meal that’s both light and satisfying!
Bibimbap Ingredients
- 1.5 bowls of freshly cooked rice
- 1.5 bowls of prepared kkoshiraegi (about 200g)
- 4 stalks of crown daisy (ssukgat)
- 1/5 bunch of garlic chives (yeongyangbuchu)
- 1 red chili pepper
- 1 green chili pepper
- 1/4 onion
- Gochujang sauce (to taste)
- Perilla oil (to taste)
Kkoshiraegi Seasoning
- 2 Tbsp gochujang sauce
- 1/2 Tbsp tuna extract
- 1/2 Tbsp soy sauce
- 2 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds
- 2 Tbsp gochujang sauce
- 1/2 Tbsp tuna extract
- 1/2 Tbsp soy sauce
- 2 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare your fresh vegetables. Cut the crown daisy and garlic chives into lengths of about 3-4 cm. Thinly slice the red and green chili peppers on an angle. Slice the onion into thin julienne strips, soak them in water for a few minutes, then drain thoroughly in a colander to maintain their crispness.
Step 2
Now, let’s prepare the kkoshiraegi. Soak the kkoshiraegi in water for about 20 minutes to remove any impurities. Bring a pot of water to a boil and blanch the kkoshiraegi for just about 30 seconds to 1 minute – be careful not to overcook it as it can become mushy. Immediately rinse the blanched kkoshiraegi under cold water to stop the cooking process and drain well.
Step 3
Slice the prepared kkoshiraegi into lengths of about 3-4 cm, similar to the vegetables, and place them in a bowl. Add all the ‘Kkoshiraegi Seasoning’ ingredients (2 Tbsp gochujang sauce, 1/2 Tbsp tuna extract, 1/2 Tbsp soy sauce, 2 Tbsp perilla oil, 1 Tbsp toasted sesame seeds) to the bowl. Gently mix everything together with your hands until the seasoning is evenly distributed.
Step 4
Now it’s time to assemble your delicious bibimbap! Start by placing 1/2 bowl of warm, freshly cooked rice into your serving bowl. Top the rice with 1/2 bowl of the seasoned kkoshiraegi. Finally, artfully arrange the prepared onion, garlic chives, crown daisy, red chili pepper, and green chili pepper on top like colorful garnishes. Drizzle with extra gochujang sauce and perilla oil to your liking, then mix everything together to enjoy this healthy and fresh Kkoshiraegi Bibimbap!
