Soba Noodles Ingredients
  • 2 servings Buckwheat Noodles (Soba)
  • Daikon Radish, a small amount (thinly julienned or grated)
  • Scallions, 2-3 stalks (finely chopped)
  • Shredded Nori Seaweed, a pinch (or seasoned seaweed)
  • Wasabi, a pinch
  • Soy Sauce, 3 Tbsp
  • Dashi Broth (made from dried anchovies and kelp), 2 cups
  • Sugar, 1 tsp

Cooking Instructions

Step 1

First, bring a generous amount of water to a boil in a pot for cooking the soba noodles. Once boiling, add the soba noodles and cook for about 30 seconds to 1 minute longer than the package instructions suggest. After cooking, rinse them thoroughly under cold running water to remove excess starch, drain completely, and set aside. This step ensures the noodles are extra chewy.

Step 2

Next, let’s make the refreshing and flavorful broth for the soba noodles. Pour 2 cups of dashi broth into a pot and bring it to a simmer. Add 3 Tbsp of soy sauce and 1 tsp of sugar, stirring well to create the sauce. For a richer flavor, you can optionally add a little tuna extract or sake. Taste and adjust the seasoning as needed.

Step 3

Finally, prepare the toppings. Wash the daikon radish, peel it, and then julienne it thinly or grate it finely. Finely chop the scallions. Shred the nori seaweed thinly or use pre-shredded seaweed flakes. Prepare a small amount of wasabi.
