Living alone makes it challenging to incorporate enough vegetables into my daily meals. This often leads to dull skin and weight gain, prompting me to start a serious diet. Today, I’m sharing a recipe for light yet satisfying dried tofu rolls packed with fresh vegetables – perfect for your diet! It’s a healthy and vibrant dish that’s both delicious and nourishing.

  • 2 sheets Dried Tofu
  • 1/2 Cucumber
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 6 slices Sandwich Ham

Tangy Soy Sauce Dressing

  • 1 Tbsp Soy Sauce
  • 2 Tbsp Vinegar
  • 1/2 Tbsp Sugar
  • 2 Tbsp Water
  • 1 Tbsp Red Pepper Flakes (Gochugaru)

Cooking Instructions

Step 1

First, let’s prepare the delicious dressing. In a bowl, combine 1 Tbsp soy sauce, 2 Tbsp vinegar, 1/2 Tbsp sugar, 2 Tbsp water, and 1 Tbsp red pepper flakes. Whisk well until the sugar is completely dissolved. This tangy and sweet sauce will beautifully complement the flavors of the dried tofu and vegetables.

Now, let’s prepare the colorful vegetables. Wash the cucumber, green bell pepper, red bell pepper, and yellow bell pepper thoroughly. Remove the seeds and slice them into thin, long julienne strips. The thinner you slice them, the prettier the rolls will look when assembled.

Briefly blanch the dried tofu. Bring a pot of water to a boil and add the dried tofu sheets for just 1 to 2 minutes. Be careful not to overcook, as it can become too soft and break apart. After blanching, rinse under cold water and gently squeeze out any excess moisture.

Similarly, quickly blanch the sandwich ham. Dip the ham slices in boiling water for about 10 seconds. This helps to remove any unwanted odors and results in a cleaner taste. With this, all your ingredients are prepped! Isn’t it simple?

Now, let’s start assembling the dried tofu vegetable rolls. Lay out a generous sheet of plastic wrap on a clean work surface or cutting board. Rolling with plastic wrap is crucial to ensure the rolls hold their shape firmly. Arrange the blanched dried tofu sheets, overlapping slightly if needed, to create a base layer.

Next, layer the blanched sandwich ham slices neatly over the dried tofu. You can overlap 2-3 slices to cover the entire surface of the tofu.

Arrange the julienned vegetables attractively on top of the ham. It’s best to pack them in tightly, filling any gaps to ensure a substantial and flavorful roll. Don’t be shy with the vegetables – more means more deliciousness and nutrition!

Time to shape the rolls! Using the plastic wrap, gently fold over the left and right sides of the dried tofu inwards, as shown in the picture.

Then, fold up the bottom edge of the dried tofu towards the filling, similar to how you would start rolling a sushi roll, to prevent the ingredients from spilling out.

Now, starting from the edge closest to you, roll up the tofu and filling tightly, much like rolling a sushi or kimbap roll. Ensure it’s rolled snugly to maintain a compact shape. Once rolled, wrap the plastic wrap tightly around the roll at least twice more to secure it firmly. Chilling in the refrigerator for about 10 minutes will help it set and make it easier to slice.
