Refreshing and Nutty Tofu Cold Salad

Main Ingredients- 200g firm tofu (use pan-frying or stewing tofu, depending on preference)
- 1/2 medium onion
Tangy and Sweet Dressing- 4 Tbsp water
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce (vegetarians, use vegan oyster sauce)
- 2 Tbsp vinegar
- 1.5 Tbsp oligo syrup (can be substituted with sugar)
- 1 pinch black pepper

Cooking Instructions
Step 1
First, prepare the tofu. Place the entire block of 200g tofu into a pot.
Step 2
Pour enough water to completely submerge the tofu. Be careful not to break the tofu.
Step 3
Bring to a boil over high heat and blanch the tofu for 5 minutes. This step firms up the tofu, making it easier to slice, and also removes any raw odor.
Step 4
Peel the onion, rinse it thoroughly under running water, and then slice it into very thin strips. Slicing it thinly will give it a crispier texture.
Step 5
Now, let’s make the dressing. In a small bowl, combine 4 Tbsp water, 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp vinegar, 1.5 Tbsp oligo syrup, and a pinch of black pepper. Whisk everything together until well combined. If using sugar, adjust the amount of oligo syrup accordingly.
Step 6
Carefully remove the blanched tofu from the water, drain any excess moisture, and cut it into bite-sized pieces, about 1.5 cm thick. Cutting it into neat squares will make it look appealing.
Step 7
Prepare a serving dish for your Tofu Cold Salad. Arrange the thinly sliced onions attractively at the bottom of the dish. The onions will absorb some of the tofu’s moisture and add flavor.
Step 8
Neatly place the cut tofu pieces on top of the bed of onions. Avoid overlapping the tofu too much so that the dressing can coat it evenly.

Finally, generously drizzle the prepared tangy and sweet dressing over the tofu and onions. You can serve it immediately, or chill it in the refrigerator for a while for an even more refreshing taste.
