How to Make a Refreshing and Spicy Pollack Roe and Tofu Stew
This recipe uses pollack roe, tofu, and leftover vegetables from the freezer and fridge to create a wonderfully refreshing pollack roe and tofu stew. It’s a simple yet satisfying meal, perfect as a hangover cure too.
Main Ingredients- 6 strings Pollack Roe
- 200g Radish (Daikon)
- 1/4 Zucchini
- 1/2 block Tofu (firm)
- 3 Korean Green Chilies
- 1 stalk Scallion
- 1/2 Tbsp Minced Garlic
- 800ml Broth (anchovy-kelp or vegetable)
- Fish Sauce, to taste
Cooking Instructions
Step 1
First, prepare the radish by peeling it and cutting it into bite-sized pieces, either thinly sliced or in larger chunks. Cooking the radish until tender will enhance the stew’s refreshing flavor.
Step 2
Slice the zucchini into half-moon shapes, about 0.5cm thick. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness.
Step 3
Cut the scallion into large diagonal pieces. Lightly rinse the pollack roe under running water, remove any membrane if desired, and then cut it into 4 manageable pieces. (You can skip removing the membrane if you prefer).
Step 4
Arrange the prepared radish, zucchini, tofu, and sliced pollack roe attractively in a pot. Feel free to add other vegetables you have on hand, such as bean sprouts, potatoes, or onions, to enrich the stew’s flavor.
Step 5
Pour the broth (or rice water, or plain water) into the pot and add the sliced radish. Bring it to a boil over high heat, then reduce to medium-low heat and simmer until the radish becomes transparent and tender. This step is crucial for extracting the refreshing taste from the radish, adding depth to the broth.
Step 6
Once the radish is sufficiently cooked, add the sliced zucchini. Zucchini cooks quickly, so it’s best added towards the end. Let it simmer together for about 2-3 minutes.
Step 7
Now, add the tofu, cut into large pieces, to the pot. Gently place the tofu to prevent it from breaking apart.
Step 8
Finally, add the prepared pollack roe and bring to a boil for a short while. Overcooking the pollack roe can make it tough, so simmer for just 2-3 minutes after adding. At this stage, season with a little fish sauce for added umami and to adjust the saltiness. You can also use soy sauce or salt according to your preference.
Step 9
As the stew nears completion, add the Korean green chilies for a spicy kick, the fragrant scallions, and the minced garlic. Simmer briefly for the flavors to meld, then turn off the heat.
Step 10
Your refreshing and spicy pollack roe and tofu stew is ready! It looks and smells delicious. Enjoy it with a warm bowl of rice.
