Refreshing and Spicy Yeolmu Bibim Guksu

The sudden warm weather has made my appetite disappear! That’s when noodle dishes become my go-to. Today, I’m sharing a delicious bibim guksu made with fresh yeolmu kimchi and refreshing cucumber kimchi. It’s a perfect dish to beat the heat and tantalize your taste buds!

Ingredients

  • Noodles for 2 servings (e.g., somyeon, jungmyeon)
  • 2 Cucumber Kimchi (Oi Sobagi), finely chopped
  • A handful of Yeolmu Kimchi (young radish kimchi), chopped
  • A handful of Chives Salad (optional, adds extra flavor)

Seasoning Sauce

  • 1 Ladle of Yeolmu Kimchi Brine (approx. 50ml)
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Maesil Extract (plum syrup)
  • 1 Tbsp Vinegar

Cooking Instructions

Step 1

Start by cooking the noodles. Bring a pot of water to a boil, add the noodles, and cook according to package directions. A helpful tip for perfectly cooked noodles is to rinse them with cold water three times while cooking to achieve a chewy texture. Once cooked, rinse the noodles thoroughly under cold running water, drain well, and set aside.

In a large mixing bowl, place the cooked and drained noodles. (The noodles in the photo have a unique color from dandelion noodles; regular noodles work perfectly fine too.)

Finely chop the prepared cucumber kimchi and add it to the bowl with the noodles. The crispiness of the cucumber kimchi will add a wonderful texture to the dish.

Add a generous amount of chopped yeolmu kimchi. If you have chives salad, add that as well for an extra layer of flavor. It looks like a vibrant green garden, doesn’t it?

Now, let’s prepare the delicious seasoning sauce. In a separate small bowl, combine 1.5 Tbsp gochujang, 1 Tbsp vinegar, and 1 Tbsp maesil extract. Stir well. Add about a ladle of the yeolmu kimchi brine to this mixture; it will enhance the savory and refreshing taste. Whisk all the sauce ingredients together until well combined.

Pour the prepared seasoning sauce over the noodles and vegetables. Mix everything together vigorously until all ingredients are evenly coated with the sauce. This yeolmu bibim guksu is so incredibly delicious that it disappears in the blink of an eye! It’s the perfect meal to revive your appetite on a warm day.
