Adding cabbage to a typical potato soup not only makes the broth refreshing but also adds a subtle sweetness, making it even more delicious. The natural sweetness of cabbage really enhances the flavor. Hearty and warm soups are always the best, especially when the weather gets chilly. This cabbage and potato soup, simmered in a rich broth made from dried pollack heads, crab, shrimp shells and heads, shiitake mushroom stems, and green onion roots with natural seasonings, is truly exceptional! Ingredients- 2 Potatoes
- 1/4 Cabbage
- 1 Red chili pepper
- 1 Cheongyang chili pepper (for spicy kick)
- 1L Natural seasoning seafood broth
- 1 tsp Minced garlic
- 2 tbsp Chopped green onions
- 1 tsp Salt
- 1 tsp Black pepper
Cooking Instructions
Step 1
First, prepare a natural seasoning seafood broth by simmering ingredients like dried anchovies, kelp, shrimp shells, and dried pollack heads to create a deep base flavor. This broth is the foundation of the soup’s taste.
Step 2
Add the peeled potatoes and cabbage, cut into similar, chunky sizes, to the prepared broth. It’s best to cut them into bite-sized pieces rather than too small.
Step 3
Sprinkle the minced garlic and chopped green onions over the potatoes and cabbage. Bring to a rolling boil over high heat.
Step 4
Season the soup with salt and black pepper only. Using soy sauce can make the broth cloudy, so we recommend seasoning with salt for a clean taste.
Step 5
Once the soup comes to a rolling boil, carefully skim off any foam that rises to the surface. Removing the foam will ensure a clear and clean broth.
Step 6
To further enhance the flavor and eliminate any potential subtle ‘green’ taste from the vegetables, add thinly julienned red and Cheongyang chili peppers. Adjust the amount of Cheongyang chili pepper if you prefer more heat.
