Salad Ingredients
  • 2 Gold Kiwis: Peeled and cut into 2cm pieces.
  • 5 Cherry Tomatoes: Stems removed, halved.
  • 1 Handful of Blueberries: Washed and patted dry.
  • 1/2 Red Bell Pepper: Seeds removed, cut into 1.5cm pieces.
  • 1/2 Yellow Bell Pepper: Seeds removed, cut into 1.5cm pieces.
  • 100g Iceberg Lettuce: Washed, dried, and torn into bite-sized pieces.
  • 100g Romaine Lettuce: Washed, dried, and torn into bite-sized pieces.
  • Balsamic Glaze, for drizzling: A little bit for garnish at the end.

Yuzu Dressing
  • 200ml Olive Oil: Extra virgin olive oil is recommended.
  • 200ml Yuzu Juice: Freshly squeezed or strained from yuzu preserves.
  • 1 Lemon: Juiced. Adds extra zest.
  • 4 Tbsp Vinegar: Apple cider vinegar or white wine vinegar will add nice flavor.
  • 0.5 Tbsp Salt: Adjust to your taste.

Cooking Instructions

Step 1

First, let’s prepare all the ingredients for our delightful yuzu dressing. Measure out everything needed for the dressing.

Step 2

In a blender or food processor, combine the olive oil (200ml), yuzu juice (200ml), juice of 1 lemon, vinegar (4 Tbsp), and salt (0.5 Tbsp). Blend until smooth and well emulsified. Blending thoroughly ensures all the flavors meld together beautifully.

Step 3

Pour the prepared yuzu dressing into a container and chill in the refrigerator. A cold dressing will enhance the refreshing quality of the salad.

Step 4

Now, let’s prepare the fruits and vegetables for the salad. Peel the gold kiwis and cut them into 2cm pieces. Remove the stems from the cherry tomatoes and halve them. For the bell peppers, remove the seeds and cut them into 1.5cm pieces. The variety of colors will make the salad look even more appetizing.

Step 5

Thoroughly wash the iceberg and romaine lettuce, shake off excess water, and tear them into bite-sized pieces. You can also use a salad spinner and chop them if preferred.

Step 6

Arrange the prepared lettuce and romaine leaves evenly at the bottom of a large salad bowl. Artfully arrange the cut fruits and bell peppers over the greens, distributing them by color for a visually stunning presentation.

Step 7

Finally, drizzle the chilled, sweet and tangy yuzu dressing generously over the salad. For an extra touch of elegance and flavor, add a swirl of balsamic glaze. Your beautiful and delicious fruit and vegetable salad is now ready to be enjoyed!
