Perfect Summer Dish: Easy Oiji Cold Soup Recipe
This Oiji Cold Soup is a go-to recipe for when I have a lack of appetite. It’s incredibly easy to make using pickled cucumbers (oiji) directly from the kimchi refrigerator. Enjoy this refreshing dish that’s perfect for a hot day!
Main Ingredients- 5 Oiji (Korean pickled cucumbers)
- 1/2 Onion
- 500ml Cold Water
Cooking Instructions
Step 1
Let’s introduce the refreshing and tangy Oiji Cold Soup. It’s the perfect choice to stimulate your appetite, even on days when you don’t feel like eating!
Step 2
Prepare 5 pieces of oiji. Rinse them thoroughly under running water to remove excess salt. Slice them thinly into rounds. Avoid slicing them too thin, as this can affect the texture. Aim for a moderate thickness.
Step 3
Prepare half an onion by thinly slicing it into strips. If you find the onion too pungent, you can soak the slices in cold water for a few minutes before draining them. This will mellow out the sharp flavor.
Step 4
In a large bowl, combine the sliced oiji and the julienned onion. Pour in 500ml of cold water. The amount of water can be adjusted depending on the saltiness of your oiji.
Step 5
Now, let’s add the seasonings. Add 1.5 tablespoons of sugar and 1.5 tablespoons of vinegar to create the foundational sweet and sour flavor. Feel free to adjust these amounts to your preference to find your perfect balance. If you like, you can add 1/2 teaspoon of minced garlic for an extra savory depth.
Step 6
Prepare a carrot for a touch of color and beauty. Slice it thinly and use small cookie cutters to shape it into hearts or other decorative shapes. Add a generous amount for garnish. Food that looks good often tastes better!
Step 7
Mix all the ingredients well. Taste and adjust the seasoning with a pinch of salt if needed. Chill in the refrigerator or, if serving immediately, add plenty of ice cubes for an extra frosty treat. Voila! Your delicious and appetite-stimulating Oiji Cold Soup is ready to enjoy!
