This seasoned seaweed salad is delightfully tangy, sweet, moist, and tender. It’s the perfect dish to awaken your appetite and is easy to make for a quick and satisfying side.
Main Ingredients- 4 handfuls rehydrated dried seaweed (approx. 200-250g)
- 1/2 cucumber (medium-sized)
- 1 chili pepper (like Korean green chili or red chili, optional)
Seasoning Ingredients- 2 Tbsp soy sauce
- 4 Tbsp gochujang (Korean chili paste)
- 1 Tbsp plum extract (or sugar)
- 1 Tbsp minced garlic
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 2 Tbsp soy sauce
- 4 Tbsp gochujang (Korean chili paste)
- 1 Tbsp plum extract (or sugar)
- 1 Tbsp minced garlic
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, thoroughly rinse the rehydrated seaweed under cold running water several times. This step is crucial to remove any grit or impurities. Once rinsed, drain the seaweed well in a colander. Then, cut the seaweed into bite-sized pieces, about 5-7 cm long, for easier eating. Avoid making them too long.
Step 2
Now, let’s prepare the delicious seasoning sauce. In a medium bowl, combine 2 Tbsp soy sauce, 4 Tbsp gochujang, 1 Tbsp plum extract (you can substitute with sugar if plum extract is unavailable for sweetness), 1 Tbsp minced garlic for a pungent kick, 1 Tbsp vinegar for that essential tanginess, and 1 Tbsp sesame oil for a nutty aroma. Stir everything together with a spoon until well combined and smooth, ensuring there are no lumps.
Step 3
Next, prepare the other vegetables. Slice the cucumber thinly into half-moons. If using a chili pepper, remove the seeds and mince it finely or slice it thinly. (Thinly sliced onion can also be added here for extra flavor and texture, if desired). Add the sliced cucumber, chili pepper, and (optional onion) to the bowl with the seaweed. Pour the prepared seasoning sauce over everything. Gently mix with your hands, ensuring the dressing coats all the ingredients evenly.
Step 4
Finally, taste and adjust the seasoning to your preference. If it’s too bland, add a little more soy sauce. If it needs more sweetness, add a touch more plum extract or sugar. For extra tang, add a little more vinegar. Once the flavors are balanced to your liking, sprinkle 1 Tbsp of toasted sesame seeds generously over the top for a nutty flavor and appealing appearance. Mix gently one last time, transfer to a serving dish, and enjoy your perfectly seasoned seaweed salad!
