Radish Soup with Refreshing Taste and Deep Umami
After the holidays, a clean and refreshing meal is often craved. We start our morning with this radish soup. Dried shiitake mushrooms are added to enhance the umami, making the soup even more flavorful. This recipe is perfect for a light yet satisfying meal.
Main Ingredients- 1/3 radish (approx. 300g)
- 120g beef (for soup)
- 2 dried shiitake mushrooms
- 1 stalk green onion

Cooking Instructions
Step 1
Prepare the ingredients for a hearty radish soup. We’ll add 120g of beef for a tender texture and rich umami, along with 2 dried shiitake mushrooms for an extra flavor boost. Also, get ready the 1/3 radish, the star of our refreshing soup, and 1 stalk of green onion for a fresh aroma.
Step 2
Slice the radish into thin, bite-sized pieces (about 0.5cm thick). If using dried shiitake mushrooms, rehydrate them in water for about 30 minutes, then remove the stems and slice them thinly or chop them finely. Slice the green onion diagonally.
Step 3
To infuse the broth with a deep flavor, heat 1-2 tablespoons of sesame oil or perilla oil in a pot over medium-low heat. These oils add a nutty aroma that enriches the soup’s taste.
Step 4
Add the beef to the heated pot and sauté until it’s no longer pink. Once the beef has browned, add the sliced radish and stir-fry for another 2-3 minutes until the radish becomes slightly translucent. Lightly sautéing the radish brings out its natural sweetness and helps create a clearer broth.
Step 5
Pour 1000ml (about 5 cups) of water into the pot with the sautéed ingredients. Using water will result in a clear and refreshing broth. Ensure there’s enough water to cover the ingredients.
Step 6
Add the sliced shiitake mushrooms and bring the soup to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 15-20 minutes, or until the radish is tender. This allows the flavors of the shiitake mushrooms to fully infuse into the broth.
Step 7
Add 1 tablespoon of soup soy sauce to establish a base flavor. Soup soy sauce adds a deep umami without making the broth cloudy, so it’s best to season further with salt to taste rather than adding too much at once.
Step 8
Stir in 1 tablespoon of minced garlic to enhance the refreshing broth with aromatic flavor. Garlic harmonizes the sweetness of the radish and the umami of the beef beautifully.
Step 9
Adjust the final seasoning with salt. Using only soup soy sauce can result in an overly salty and dark broth. Adjusting with salt is the key to keeping the broth clear and clean. Add salt gradually while tasting.
Step 10
Finally, add a pinch of pepper and the diagonally sliced green onions. Simmer for another minute, and your refreshing and umami-rich radish soup is complete! Enjoy it hot with a bowl of rice.
