Homemade Avocado Cheese Tart: A Delightful Citrus Dessert
Yesterday, I felt like I needed a refreshing dessert, so I decided to make a cheese tart using the avocados I had at home. Avocados are lovely and creamy, but can sometimes be a bit plain on their own. However, when paired with lime, they transform into something truly special and vibrant! This tart offers a unique flavor profile that’s both sophisticated and surprisingly easy to make. I highly recommend giving it a try!

Cooking Instructions
Step 1
Prepare the tart crust. First, crush the 100g of biscuits into fine crumbs. You can place them in a zip-top bag and use a rolling pin or the bottom of a glass to break them down. It’s nice to leave some slightly larger pieces for texture.
Step 2
Make the lime zest. Wash a lime thoroughly. Using a zester or a fine grater, carefully remove the yellow outer peel, avoiding the bitter white pith. You need about 1 tablespoon of zest.
Step 3
Juice the lime. Cut the washed lime in half and squeeze out about 1 tablespoon of fresh lime juice.
Step 4
In a bowl, combine the crushed biscuits, 30g of liquid cream, the prepared lime zest, and lime juice. Mix well with a spatula or your hands until the biscuit crumbs are evenly moistened and start to clump together. This will form the base of your tart.

Line a tart pan with parchment paper. Pour the biscuit mixture into the lined pan. Press the mixture down firmly and evenly onto the bottom of the pan using the back of a glass or a spoon. Ensure it’s compact to create a solid base.

Gently press the biscuit mixture up along the sides of the tart pan to form the crust walls. Use your fingers or a spoon to shape and smooth the edges. This helps maintain the tart’s structure when it’s set.

Now, let’s make the avocado cheese mousse. Halve the ripe avocado, remove the pit, and scoop out the flesh into a bowl. Mash the avocado thoroughly with a fork until it’s smooth and free of large lumps.

Add 66.7g of softened cream cheese to the mashed avocado. Mix them together with a spatula until well combined and smooth. Ensure there are no visible lumps of cream cheese.

In a separate bowl, whip 66.7g of liquid cream using an electric mixer until soft peaks form. Gradually add the 26.5g of sugar and 6.5g of trehalose (a sugar substitute that adds a smooth sweetness and stability) while whipping, until medium peaks form. Gently fold the whipped cream into the avocado-cream cheese mixture. Add the 1 tablespoon of lime juice and 1 tablespoon of lime zest, and carefully mix everything together with a spatula until just combined, being careful not to deflate the whipped cream. You should have a smooth, airy mousse.
Step 10
Pour the prepared avocado cheese mousse onto the crust in the tart pan. Spread it evenly with a spatula to create a smooth surface.
Step 11
Cover the tart with plastic wrap. Use the back of a spoon or a scraper to gently smooth the surface of the mousse. Covering it prevents a skin from forming and protects it from absorbing odors in the refrigerator.
Step 12
Chill the tart in the refrigerator for at least half a day (about 6 hours), or until it is completely set and firm. This chilling time is crucial for the tart to hold its shape when sliced.
