Refreshing Bibim Naengmyeon (Spicy Mixed Noodles) Recipe

On these sweltering summer days, nothing is more satisfying than a cool bowl of naengmyeon. Tonight, let’s whip up some delicious Bibim Naengmyeon right at home! We’ve crafted a special sauce that’s perfectly spicy and sweet, complemented by plenty of crisp cucumbers for a delightful texture. This recipe is a lifesaver for busy evenings – simply make the sauce ahead of time and store it in the fridge. Then, all you need to do is boil the noodles for a quick and satisfying meal. Noodles and Toppings- 1 serving Naengmyeon noodles
- 1/2 hard-boiled egg
- 1/2 cucumber
Spicy Bibim Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp minced garlic
- 2 Tbsp Maesilcheong (plum syrup)
- 1 Tbsp low-sodium soy sauce
- 2 Tbsp vinegar
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp sesame oil
- 1/2 Tbsp sugar
- A pinch of sesame seeds
- 2 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp minced garlic
- 2 Tbsp Maesilcheong (plum syrup)
- 1 Tbsp low-sodium soy sauce
- 2 Tbsp vinegar
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp sesame oil
- 1/2 Tbsp sugar
- A pinch of sesame seeds
Cooking Instructions
Step 1
Gently rub the naengmyeon noodles with your hands to separate them. This prevents them from clumping together and helps the sauce adhere better.
Step 2
Wash the cucumber, remove the seeds, and julienne it into thin strips. This adds a refreshing crunch to the dish.
Step 3
In a small bowl, combine all the sauce ingredients except for the sesame seeds: gochujang, minced garlic, maesilcheong, soy sauce, vinegar, oligodang, sesame oil, and sugar. Stir well until the sugar is completely dissolved. This is the secret to a delicious Bibim Naengmyeon!
Step 4
Bring a pot of water to a rolling boil. Add the naengmyeon noodles and stir gently with chopsticks to prevent sticking. Cover the pot and boil for about 30-40 seconds – don’t overcook, or the noodles will become mushy! Immediately drain the noodles and rinse them thoroughly under cold or ice water 2-3 times. Rinsing makes the noodles firm and removes excess starch.
Step 5
Drain the rinsed noodles well in a colander. Excess water can dilute the sauce. Arrange the drained noodles attractively in a serving bowl.

Spoon the prepared spicy bibim sauce generously over the chilled noodles.

Top the sauced noodles with the julienned cucumber, the halved hard-boiled egg, and a sprinkle of sesame seeds for added flavor and texture.
