Refreshing Celery Salad (Japanese Otsumami Style)

This is Otsumami Celery, a Japanese dish perfect for enjoying with drinks. It’s a refreshing and lightly seasoned celery salad.
Ingredients- 100g fresh celery
- 1 tsp salt (for salting celery)
- 2 Tbsp yuzu marmalade
- 1 Tbsp vinegar
- 1 pinch katsuobushi (bonito flakes) (for garnish)
Cooking Instructions
Step 1
Wash the celery thoroughly, peel if desired, and thinly slice it diagonally at about 0.5cm thickness. Slicing it not too thin will help retain its crisp texture.

Place the sliced celery in a bowl. Add 1 teaspoon of salt and toss to coat evenly. Let it sit for about 10 minutes to lightly pickle. This step helps reduce any bitterness and enhances the crispness.

Gently squeeze out excess moisture from the salted celery. Then, add 2 tablespoons of yuzu marmalade and 1 tablespoon of vinegar. Mix gently to ensure the celery is well coated with the sweet and tangy flavors.

Transfer the seasoned celery to an airtight container. Close the lid and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld beautifully.
