Refreshing Chicken Breast Chogye-guksu

Main Ingredients- 180g chicken breast
- 180g somyeon noodles
- 700ml chicken broth
- 300ml dongchimi (radish kimchi) cold broth
- 100g cucumber
- 1 egg
- 1 cherry tomato
Broth Seasoning- 3 Tbsp mentsuyu (soy sauce seasoning)
- 3 Tbsp plum extract
- 2 tsp mustard paste (like Korean seorae mustard)
- 1 Tbsp vinegar
Cucumber Pickle- 1 tsp salt
- 1 Tbsp vinegar
- 1 Tbsp sugar

- 1 Tbsp sesame seeds
- 2 pinches salt
- Pinch of black pepper
- 1 Tbsp chopped green onions

Cooking Instructions
Step 1
Place the chicken breast in a pot and cover with water. Bring to a boil over high heat. Discard the first boiling water and rinse the chicken breast thoroughly. Add 700ml of fresh water to the rinsed chicken breast, bring to a boil again over high heat, then reduce to medium heat and simmer for 15 minutes until tender.
Step 2
I cooked extra chicken breast as I plan to use it for other dishes. For a standard serving, 180g of chicken breast is sufficient per person. Let the cooked chicken breast cool completely.
Step 3
Don’t discard the water used to boil the chicken breast! We will use this flavorful broth for our Chogye-guksu.
Step 4
Prepare the cooled chicken broth and some store-bought dongchimi (radish kimchi) cold broth. Combine these two broths for a more complex and refreshing flavor.
Step 5
In a bowl, mix 2 tsp mustard paste, 3 Tbsp mentsuyu, 3 Tbsp plum extract, and 1 Tbsp vinegar to create the Chogye-guksu dressing. Add this dressing to the prepared broths and stir well to combine. Chill the broth in the freezer until it’s lightly slushy or icy.
Step 6

Step 7
Thinly slice the cucumber. In a bowl, combine the sliced cucumber with 1 Tbsp sugar, 1 tsp salt, and 1 Tbsp vinegar. Gently toss and let it pickle for about 10 minutes.
Step 8
After pickling, squeeze out excess water from the cucumber. This will make it crispier and more flavorful.
Step 9
Shred the cooled chicken breast along the grain. In a separate bowl, season the shredded chicken with 1 Tbsp sesame oil, 1 Tbsp sesame seeds, 2 pinches of salt, a pinch of black pepper, and 1 Tbsp chopped green onions. Gently mix until well combined.
Step 10
Bring 1.5 liters of water to a rolling boil in a large pot. Add the somyeon noodles and cook for about 3 minutes. To check for doneness, retrieve a few strands, rinse them in cold water, and taste. Adjust cooking time if necessary for a perfectly chewy texture.
Step 11
Rinse the cooked somyeon noodles thoroughly under cold running water, rubbing them gently. This step is crucial to remove excess starch and prevent any floury taste, ensuring a delightfully chewy noodle. Drain well in a colander.
Step 12
Assemble the dish in a large bowl: place a portion of the drained somyeon noodles, top with the squeezed pickled cucumber, seasoned shredded chicken breast, a halved boiled egg, and a fresh cherry tomato. Finally, ladle the chilled, icy broth over everything.
