I love the rich, tangy flavor of balsamic vinegar and enjoy incorporating it into various dishes. This time, I tried making a salad with chicory and balsamic. While I personally felt that a salad might showcase the vibrant colors better than a tossed salad, the taste itself was wonderfully refreshing and palate-cleansing, perfect for when your appetite is a bit low. It’s also a fantastic way to increase your vegetable intake. Even though my family didn’t quite take to the color, this Chicory Balsamic Salad is a recipe I’ll cherish for its excellent taste. It’s incredibly simple to prepare, making it a great option for busy days.

Main Ingredients

  • 200g fresh chicory
  • 1/3 red bell pepper
  • 1/4 yellow bell pepper

Sweet & Tangy Balsamic Dressing

  • 1 Tbsp balsamic vinegar
  • 1/2 Tbsp sesame seeds
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Gently tear the fresh chicory into bite-sized pieces (about 5cm long) by hand. Rinse thoroughly under cold running water. To remove excess moisture, you can use a salad spinner or drain it well in a colander.

Remove the seeds from the red and yellow bell peppers, then slice them thinly into julienne strips. The colorful strips will add visual appeal to your dish.

In a small bowl, combine 1 Tbsp balsamic vinegar, 1/2 Tbsp sesame seeds, 1/2 Tbsp soy sauce, and 1/2 Tbsp red pepper flakes. Whisk together until well combined to create a delicious balsamic dressing.
