Homemade Chogye Cold Pasta Recipe: A Lighter and Cooler Summer Delight Than Chogye Guksu

Here’s my Chogye Cold Pasta recipe, a delightful twist on the classic Chogye Guksu (cold chicken soup noodles), offering a lighter and even more delicious experience.
Fresh Toppings- 1/4 cucumber (thinly julienned)
- 30g carrot (thinly julienned)
- 2 lettuce leaves (chopped into bite-sized pieces)
- 30g cabbage (thinly julienned)
Flavorful Chicken Breast Topping- 100g cooked chicken breast
- 1/2 tsp wasabi (or hot mustard)
- 1/2 tsp whole grain mustard
- 1 Tbsp lemon juice
- 1/2 Tbsp allulose (or sugar)
Tangy and Sweet Dressing- 2 Tbsp sesame seeds (finely ground)

Cooking Instructions
Step 1
First, prepare your fresh vegetable toppings. Wash the cucumber thoroughly, peel it using a vegetable peeler, and then julienne it thinly. This method ensures a crisp texture and an appealing presentation.

Julienne the carrot, lettuce, and cabbage to a similar thickness as the cucumber. The vibrant colors of these vegetables will make the dish look even more appetizing. Tear the lettuce leaves into bite-sized pieces.

Place the cooked chicken breast in a bowl and shred it finely along the grain. In the same bowl, add 1/2 tsp wasabi (or hot mustard), 1/2 tsp whole grain mustard, 1 Tbsp lemon juice, and 1/2 Tbsp allulose.
