  • Plenty of ice cubes

Cooking Instructions

Step 1

Let’s introduce you to Yeolmu Mul Guksu, a perfect dish to cool you down!

Step 2

First, prepare the flavorful kimchi juice from your young radish kimchi. Gently strain the kimchi through a sieve to collect the clear brine. This will form the base of your refreshing soup. You can finely chop the kimchi pieces for topping.

Step 3

Combine the strained kimchi juice with the vegetable broth (or your preferred homemade broth). Gradually add 1 tablespoon of sugar, tasting as you go, to balance the flavors. Adjust the sweetness to your preference.

Step 4

Place the prepared broth mixture in the refrigerator to chill thoroughly. The colder it is, the more refreshing your noodle soup will be!

Step 5

Now, it’s time to cook the somyeon noodles. Bring a pot of water to a rolling boil and add the noodles. Stir gently to prevent them from sticking together while cooking. Cook according to package directions, but it’s often best to slightly undercook them for a chewier texture.

Step 6

Once cooked, drain the noodles and rinse them thoroughly under cold running water. For extra firmness and a delightful springy texture, rinse them in ice water. Drain them well in a colander.

Step 7

Ensure that the noodles are as dry as possible after rinsing. Excess water can dilute the broth, so drain them thoroughly in a colander for a minute or two.

Step 8

Generously place the well-drained noodles into a serving bowl. Arrange them nicely for an appealing presentation.

Step 9

Top the noodles with the chopped young radish kimchi and the halved hard-boiled egg. Carefully ladle the chilled broth over everything. Add a generous amount of ice cubes to keep the soup refreshingly cold.

Step 10

Finally, sprinkle a pinch of toasted sesame seeds over the top. Your delicious and visually appealing Yeolmu Mul Guksu is now ready to be enjoyed! Savor this delightful, cooling dish.
