This recipe, inspired by Kang Ho-dong and featured on ‘Sesang modeun recipe’ (All Recipes of the World) and ‘Man-gae Recipe’, is perfect for beating the summer heat. Simple yet bursting with flavor, it’s an ideal summer delicacy!
Noodle Ingredients
- 1 serving of somyeon (thin wheat noodles)
Refreshing Broth Ingredients
- 3 packs of dried anchovies (deguhi), guts removed
- 1/2 onion
- 1 piece of radish (approx. 5cm)
- 2 dried red chilies
- 1/4 cup whole garlic cloves
- A pinch of whole black peppercorns
- 3L water
Savory Soy Sauce Base Ingredients
- 1 cup soup soy sauce (guk-ganjang)
- 1/2 cup cooking wine (mirin)
- 2 Tbsp minced garlic
- 1/3 Tbsp minced ginger
Sweet and Sour Seasoning Ingredients
- 1/6 cup minced garlic
- 1/2 cup minced cheongyang chili pepper (adjust to taste)
- 1/2 cup chopped green onions
- 1/2 cup soy sauce base
- 1/4 cup sugar
- 1/2 cup vinegar
Colorful Topping Ingredients
- 1 hard-boiled egg
- 3 slices of shredded pickled radish (danmuji)
- A little bit of radish sprouts
- A little bit of shredded seaweed (gim)
- 1 Tbsp toasted sesame seeds
- 2-3 drops of sesame oil

Cooking Instructions
Step 1
In a deep pot, combine the dried anchovies, onion, radish, dried chilies, whole garlic, whole black peppercorns, and 3L of water. Bring to a boil over medium heat and simmer for 10-15 minutes to extract a flavorful broth. Skim off any foam that rises to the surface during simmering for a cleaner broth.
Step 2
In another pot, add the ingredients for the soy sauce base: soup soy sauce, cooking wine, minced garlic, and minced ginger. Bring it to a boil for a moment to meld the flavors. After boiling, strain it through a fine sieve to obtain a clear, savory soy sauce base.
Step 3
In a large bowl, combine all the seasoning ingredients: minced garlic, minced cheongyang chili pepper, chopped green onions, soy sauce base, sugar, and vinegar. Mix thoroughly to create a well-balanced sweet and sour seasoning. You can adjust the amount of cheongyang chili pepper to make it spicier according to your preference.
Step 4
In a generous amount of boiling water, add 1 serving of somyeon (about the size of a 500-won coin) and cook according to the package instructions. Immediately drain the cooked noodles and rinse them thoroughly under cold running water to achieve a firm, chewy texture. This rinsing step enhances the noodles’ springiness.
Step 5
Ladle the chilled broth into serving bowls. Arrange the rinsed somyeon noodles attractively. Top with the shredded pickled radish, a halved hard-boiled egg, fresh radish sprouts, and 6 tablespoons of the prepared seasoning. Finally, sprinkle with shredded seaweed, a generous amount of toasted sesame seeds, and a few drops of sesame oil for a complete, appetizing bowl of refreshing cold noodles!
