Bringing fresh greens to the table daily is the first step to a healthy diet. Today, we’re preparing a special dish using chamnamul, brimming with the fragrance of spring. After carefully preparing the chamnamul, we’ve made a crunchy and refreshing ‘Chamnamul Salad’. While apples are often used in chamnamul salads, this time we’ve added sweet cherry tomatoes for an even brighter flavor. This ‘Chamnamul dish’ is not only great as a side dish but also perfect as a light salad. Enjoy the essence of spring with this delicious chamnamul salad!
Main Ingredients- 100g Chamnamul (Angelica)
- 1/4 cucumber
- 1/8 carrot
- 5 cherry tomatoes
- 1/4 green onion
Seasoning- 1 Tbsp tuna extract (or soy sauce)
- 1 Tbsp sugar
- 1 Tbsp plum extract
- 1 Tbsp Yeondu Essence (or 0.5 Tbsp Korean soup soy sauce)
- 1 Tbsp vinegar
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1 Tbsp tuna extract (or soy sauce)
- 1 Tbsp sugar
- 1 Tbsp plum extract
- 1 Tbsp Yeondu Essence (or 0.5 Tbsp Korean soup soy sauce)
- 1 Tbsp vinegar
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, lightly rinse the fresh chamnamul under running water a couple of times to remove any dirt. Then, soak the chamnamul in water with a little vinegar for about 5 minutes; this helps to clean it thoroughly, though it’s optional. After soaking, drain the chamnamul well in a colander.
Step 2
Remove the stems from the cherry tomatoes and cut them in half. Also, cut the chamnamul into bite-sized pieces, about 5-7 cm long, as it can be too long otherwise.
Step 3
Peel the cucumber if desired and julienne it thinly. Julienne the carrot to a similar thickness. Finely chop the green onion, focusing on the white parts for a nice aroma.
Step 4
In a bowl, combine the tuna extract, sugar, plum extract, Yeondu Essence, vinegar, and minced garlic. Mix well to create the dressing. (If Yeondu Essence is unavailable, you can substitute with Korean soup soy sauce.) Add the julienned carrots and cucumber, and the chopped green onion to the dressing and mix gently.
Step 5
Now, add the prepared chamnamul and the halved cherry tomatoes to the bowl with the dressed vegetables. Gently toss everything together, being careful not to mash the chamnamul. The key is to mix it lightly so the seasoning coats everything evenly.
Step 6
Transfer the deliciously seasoned chamnamul salad to a serving plate. Finish by sprinkling toasted sesame seeds generously over the top for extra nutty flavor.
