Refreshing Dried Pollack Stew (Myeongtae-tang)
A Delectable Dried Pollack Stew!
I had a dried pollack that was perfectly dried, so I decided to make a refreshing and savory stew with it, adding radish. It was clean, light, slightly spicy, and absolutely delicious! This stew is wonderfully comforting and perfect for a light meal or even as a hangover remedy.
Main Ingredients- 1 Dried Pollack (Myeongtae)
- 1/2 piece Radish (large cut)
- 1 Liter Rice Water (or water)
- 1 stalk Green Onion
- 5 Cheongyang Peppers (adjust to spice preference)
Seasoning- 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Salt (for seasoning)
- 5 cloves Garlic (minced)

Cooking Instructions
Step 1
First, cut the radish into large, bite-sized pieces that will fit well at the bottom of your pot. Cutting it large helps it retain its texture and release its refreshing flavor into the broth.
Step 2
Rinse the dried pollack thoroughly and trim off any fins or tail. Cut the pollack into 4 equal portions. If there are any internal organs, it’s best to remove them for a cleaner taste.
Step 3
Place the cut radish pieces in the bottom of the pot, then arrange the pollack pieces on top. Pour in enough rice water (or regular water) to cover the ingredients generously. Rice water adds a lovely subtle richness and depth to the broth. Bring to a boil over high heat, then reduce to medium heat and simmer for at least 10 minutes to allow the flavors to meld.
Step 4
Once the radish and pollack are partially tender, season the broth with 2 tablespoons of soy sauce for soup and 1 tablespoon of salt. Taste and adjust the seasoning as needed – remember that dried pollack can already be quite salty, so add salt gradually. Let it simmer for another 5 minutes to ensure the flavors are well incorporated.
Step 5
Finally, add the chopped green onion, minced garlic, and sliced Cheongyang peppers to the pot. Let it come to a gentle boil. The fresh aroma of the green onion and peppers will enhance the overall flavor of the stew. Once it’s bubbling nicely, your delicious pollack stew is ready!
