Chilled Tomato Broth
  • 200ml commercial tomato juice
  • 100ml cold water
  • 20ml mentsuyu (Japanese soy-based dipping sauce)

Cooking Instructions

Step 1

Finely julienne the scallions intended for garnish. To remove their pungent flavor and enhance their crispiness, soak them in cold water for about 10 minutes, then drain them well.

Step 2

Score the base of the tomato with a cross shape using a knife. Blanch the tomato in boiling water for about 30 seconds to 1 minute, then immediately transfer it to an ice bath to cool. This step makes peeling very easy.

Step 3

Peel the blanched tomato and cut it into small, bite-sized cubes. These will add a delightful texture to the dish.

Step 4

In a bowl, combine 200ml of tomato juice, 100ml of cold water, and 20ml of mentsuyu. Mix well to create the chilled broth base. Add the cubed tomatoes and gently stir. This creates a rich and flavorful tomato cold noodle broth.

Step 5

Cook the somen noodles in boiling water according to package directions, or for about 7-8 minutes, until al dente. Rinse the cooked noodles thoroughly under cold running water, rubbing gently to remove excess starch. Drain them completely in a colander.

Step 6

Arrange the drained somen noodles attractively in a serving bowl. Pour the chilled tomato broth over the noodles. Finally, top with the julienned scallions. Your refreshing sweet and tangy tomato cold noodles are ready! For an extra touch, consider adding a hard-boiled egg or shredded cucumber.
