This Gompimiyeok (a type of edible kelp) salad with a zesty vinegar dressing is the perfect way to awaken your appetite! The flavorful dressing is perfectly balanced for one pack of water seaweed (approx. 360g), offering a refreshing taste that’s both a wonderful side dish and a great snack.

Main Ingredients

  • Gompimiyeok or Water Seaweed 360g
  • 1 Onion (small)
  • 1 Apple (small)
  • 1/2 Tbsp Coarse Salt (for blanching seaweed)

Sweet and Sour Dressing

  • 4 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Vinegar (adjust if using double-strength vinegar)
  • 2 Tbsp Toasted Sesame Seeds (or crushed sesame seeds)
  • 2 Tbsp Honey (can substitute with corn syrup)
  • 2 Tbsp Maesil Cheong (Plum Extract)

Cooking Instructions

Step 1

Thoroughly rinse the Gompimiyeok (or water seaweed) by rubbing it with your hands under running water several times. Bring a pot of water to a boil, add the coarse salt, and blanch the seaweed for about 1 minute. Immediately drain and rinse the blanched seaweed under cold water to cool it down. Squeeze out any excess water gently, then cut the seaweed into bite-sized pieces, about 3-4 cm long.

Peel and core the apple and onion. Slice them thinly into matchsticks. Cutting them to a similar length as the seaweed will ensure a harmonious texture when mixed.

In a bowl, combine the Gochujang, vinegar, sesame seeds, honey, and plum extract. Whisk well to create the dressing. (Tip: If using double-strength vinegar, it’s best to start with a smaller amount and adjust to taste. If the dressing seems too thin, you can add a little more vinegar or adjust the consistency by using corn syrup instead of honey.)

In a large bowl, add the prepared seaweed, julienned onion, and julienned apple. Pour the prepared dressing over the ingredients. Gently mix everything together with your hands, ensuring the dressing is evenly distributed without mushing the ingredients. Taste and adjust seasoning by adding more vinegar or honey if desired.
