Step 1

Begin by thoroughly cleaning the grapefruits. Mix baking soda with coarse sea salt and gently scrub the grapefruit rinds. This step effectively removes any dirt or impurities from the peel.

After washing, carefully cut the grapefruits in half lengthwise. Then, using a spoon or a melon baller, gently scoop out the grapefruit segments. Be careful not to damage the grapefruit rinds, as they will be used as serving bowls.

Separate from the scooped-out pulp, meticulously remove the white pith and membrane from the inside of the grapefruit rinds using a knife or spoon. This white pith can impart a bitter taste, so cleaning it thoroughly is key to achieving the best jelly flavor.

Now, let’s enhance the jelly’s flavor. Place the scooped grapefruit segments into a bowl and toss them with 4 tablespoons of honey. Let them marinate while you prepare the gelatin. This allows the segments to absorb the honey’s sweetness, making them even more delicious.

Step 5

Don’t discard the bits and pieces or the juice obtained from cleaning the grapefruit rinds! Strain these scraps through a fine-mesh sieve to collect the clear grapefruit juice. Set this aside for later.

Step 6

Prepare the gelatin for the jelly. Soak 4g of sheet gelatin in cold water for about 10 minutes until it becomes soft and pliable.

In a microwave-safe bowl, combine the 1/4 cup of reserved grapefruit juice with the soaked gelatin sheets. Microwave for approximately 40 seconds, or until the gelatin is fully dissolved and the liquid is clear. Stir well to ensure it’s completely melted.

Pour the melted gelatin mixture into a mixing bowl. Add the cooled grapefruit juice (from the marinated segments), 3/4 cup of grapefruit ade, 1.5 tablespoons of lemon juice, and 1 tablespoon of sugar. Whisk everything together until well combined and smooth, ensuring no lumps remain.

Step 9

Arrange the honey-marinated grapefruit segments attractively inside the prepared grapefruit rind bowls. Then, carefully pour the prepared jelly mixture over the segments. Ensure the segments are nicely distributed within the jelly.

Step 10

Fill the remaining space in the grapefruit rind bowls with the jelly mixture. Be careful not to overfill. This will create a beautiful jelly dessert with the rind as the outer shell.

Step 11
