  • 6 ripe green kiwis
  • 50g granulated sugar (adjust to taste)
  • 10g fresh lemon juice (approx. 1/2 Tbsp)
  • 20g cold water (approx. 1 Tbsp)

Cooking Instructions

Step 1

Start by preparing your kiwis. Wash 6 fresh green kiwis thoroughly. Trim off both ends and carefully peel the skin. Cut the peeled kiwis into manageable chunks (about 1-inch pieces) for easier blending.

Step 2

Place the prepared kiwi chunks into a blender or food processor. Add the granulated sugar (50g), fresh lemon juice (10g), and cold water (20g). These ingredients will create the sweet, tart, and smooth base for your sorbet.

Step 3

Now, it’s time to blend. Be careful not to over-blend, as this can make the kiwi seeds too fine and release a bitter taste. Pulse the blender in short bursts, about 3 seconds at a time, for just 1-2 cycles. You want a slightly textured mixture where some small pieces of kiwi and intact seeds are still visible. This texture adds to the delightful bite of the sorbet.

Step 4

Pour the blended kiwi mixture into a shallow, freezer-safe container (a metal or plastic container works best). A shallow container allows the mixture to freeze more evenly and quickly. Place the container in the freezer.

Step 5

After about 2 hours, the mixture should be starting to freeze around the edges. Remove the container from the freezer. Using a fork or a whisk, vigorously scrape and stir the mixture to break up any ice crystals and create a smooth, slushy consistency. This process, known as ‘scraping,’ is crucial for achieving a soft sorbet texture. Return the container to the freezer and repeat this scraping process every 1-2 hours for about 3-4 times, or until the sorbet reaches a smooth, scoopable consistency.

Once your sorbet has reached the perfect smooth and icy texture, it’s ready to be enjoyed! Scoop it into bowls and serve immediately for a wonderfully refreshing and homemade treat.
