Refreshing Homemade Buckwheat Noodles (Soba)
Make Refreshing Buckwheat Noodles Without Tsuyu: Deliciously Healthy Broth and Sauce for a Diet Meal!
Today, we’re making ‘Buckwheat Soba’ using nutritious buckwheat noodles! Buckwheat is known to be nutritionally superior, containing more protein than other grains.
Ingredients (for 2 servings)- Buckwheat noodles, 2 servings
- Daikon radish, 30g
- Scallions, 6 Tbsp, chopped
- Wasabi
Chilled Buckwheat Broth- Anchovy and kelp broth, 800ml
- Bonito flakes, 25g
- Soy sauce, 5 Tbsp
- Sugar, 2 Tbsp
- Sake (or mirin), 4 Tbsp

Cooking Instructions
Step 1
Bring 800ml of anchovy and kelp broth to a boil in a pot, then reduce the heat to low.
Step 2
Turn off the heat, add 25g of bonito flakes to the broth, cover, and let it steep for about 10 minutes to infuse the flavors.
Step 3
Strain the broth using a fine-mesh sieve or cheesecloth to remove the bonito flakes, leaving a clear, flavorful broth. This is the base for your delicious soba sauce.
Step 4
Add 5 Tbsp of soy sauce to the strained broth.
Step 5
Stir in 2 Tbsp of sugar to add a touch of sweetness.
Step 6
Finally, add 4 Tbsp of sake (or mirin) to enhance the flavor and remove any fishy smell. Chill thoroughly in the refrigerator. The colder, the better!
Step 7
Peel and wash the 30g of daikon radish, then grate it very finely using a grater. This will give a smooth and clean taste.
Step 8
Gently squeeze out excess water from the grated daikon radish. Be careful not to squeeze too hard, or it might become dry.
Step 9
Cook the 2 servings of buckwheat noodles in plenty of boiling water according to package directions, or for about 5-7 minutes, until al dente. Stir occasionally to prevent sticking.
Step 10
Immediately transfer the cooked noodles to ice-cold water and rinse them thoroughly by rubbing them between your hands. This removes excess starch, resulting in firm, chewy noodles. Drain them very well.
Step 11
Prepare the finely grated daikon radish and wasabi as accompaniments. Adjust the amount to your preference.
Step 12
Arrange the drained buckwheat noodles attractively by swirling them into a nest in a serving bowl. Sprinkle generously with the chopped scallions for a fresh, aromatic finish.
Step 13
Pour the chilled soba broth over the noodles. Dip the noodles into the broth with a bit of grated daikon and wasabi before eating. It’s so delicious, it’ll awaken even the sleepiest appetite! Truly a delightful dish.
