Main Ingredients

  • Crab sticks (small size), 4 sticks
  • Bell peppers (yellow and red), 1/5 of each
  • Seasoned seaweed sheets (gim), 8 sheets
  • Fried tofu pockets (yubu, rectangular shape), 8 pieces
  • Cooked rice, 1.5 bowls
  • Seasoning powder for rice balls, 1 sachet

Sushi Vinegar Mixture

  • Rice vinegar, 1 Tbsp
  • Sugar, 0.5 Tbsp
  • Salt, 1 pinch

Lemon Mayonnaise Sauce

  • Mayonnaise, 2 Tbsp
  • Sugar, 0.5 Tbsp
  • Lemon juice, 0.5 Tbsp
  • Mustard sauce, 0.5 Tbsp
  • Grated Parmesan cheese, 0.5 Tbsp
  • Salt, 0.5 pinch

Cooking Instructions

Step 1

First, prepare the fillings. Gently shred the crab sticks lengthwise into halves. Slice the yellow and red bell peppers into strips of similar length to the crab sticks, creating colorful juliennes for visual appeal.

Step 1

Step 2

In a bowl, place 1.5 bowls of cooked rice. Add the entire sachet of seasoning powder for rice balls and the prepared sushi vinegar mixture (mix 1 Tbsp rice vinegar, 0.5 Tbsp sugar, and 1 pinch salt). Gently mix with a rice paddle, being careful not to mash the grains, until everything is well combined and the rice is seasoned.

Step 2

Step 3

Lay one piece of fried tofu (yubu) flat. Place a sheet of seasoned seaweed (gim) on top of the yubu, aligning it so it covers the tofu.

Step 3

Step 4

Spread a moderate amount of the seasoned rice evenly over the seaweed sheet. Avoid making the rice layer too thick, as this can make rolling difficult. Arrange the shredded crab sticks and julienned bell peppers attractively over the rice.

Step 4

Step 5

Carefully begin rolling the yubu and gim tightly, similar to how you would make miniature kimbap. Ensure the fillings are securely enclosed. Gently press the seam to seal the roll.

Step 5

Step 6

Slice the finished yubu rolls in half for easy serving and arrange them on a plate. Prepare the zesty Lemon Mayonnaise Sauce by whisking together 2 Tbsp mayonnaise, 0.5 Tbsp sugar, 0.5 Tbsp lemon juice, 0.5 Tbsp mustard sauce, 0.5 Tbsp grated Parmesan cheese, and 0.5 pinch of salt. Serve the rolls with the sauce for dipping and enjoy this delightful meal!
