Refreshing Kimchi Water Cold Noodles
[Nongshim Nest Noodle Recipe Contest] Kimchi Water Cold Noodles – A Unique Summer Delicacy!
This recipe creatively transforms Nongshim’s popular Nest Noodle Dongchimi Water Cold Noodles into a delightful dish inspired by ‘mukbap’ (rice with cold soup and toppings). The chewy texture of the Nest Noodles pairs perfectly with the seasoned aged kimchi, creating a wonderfully flavorful and refreshing meal, ideal for days when your appetite is low.
Main Ingredients- Nongshim Nest Noodle 1 pack (Dongchimi Water Cold Noodles flavor)
- Aged Kimchi (Mukimchi) 100g
- Cucumber 35g
- Boiled Egg 1/2 (or 1 whole)
Kimchi Seasoning- Sugar 1/2 Tbsp
- Sesame Seeds 1 tsp
- Sesame Oil 1 tsp
- Sugar 1/2 Tbsp
- Sesame Seeds 1 tsp
- Sesame Oil 1 tsp
Cooking Instructions
Step 1
First, prepare the aged kimchi. Finely chop the aged kimchi into bite-sized pieces (about 1 cm). In a bowl, combine the chopped kimchi with 1/2 Tbsp sugar, 1 tsp sesame seeds, and 1 tsp sesame oil. Gently mix and knead the ingredients together until the seasoning is well incorporated. The sugar helps to balance the tanginess of the aged kimchi, making it even more delicious.
Step 2
For the boiled egg, let it sit at room temperature for about 30 minutes before cooking. This helps prevent cracking during boiling. Place the egg in boiling water and cook for approximately 8 minutes for a hard-boiled result. Set aside. Wash the cucumber, slice it thinly, and then julienne it into fine strips for garnish.
Step 3
Prepare to cook 1 serving of Nongshim Nest Noodles according to the package instructions.
Step 4
Bring a pot of water to a rolling boil. Once boiling, reduce the heat to low. Add the Nest Noodle noodles and the Dongchimi Water Cold Noodles soup base. Gently stir and loosen the noodles for about 3 minutes as they cook, ensuring they don’t stick together. Using a timer is recommended for perfectly chewy noodles.
Step 5
Once cooked, rinse the noodles thoroughly under cold running water to remove excess starch. Drain them completely. This step ensures the noodles are firm, springy, and delightfully cold.
Step 6
In a separate bowl or pitcher, mix 260ml of cold water with the Dongchimi Water Cold Noodles soup base to create the chilled broth. Place the cooked Nest Noodles into a serving bowl. Carefully pour the prepared cold broth around the edges of the noodles, ensuring they are submerged.
Step 7
Now, artfully arrange the toppings. Place the seasoned aged kimchi, julienned cucumber, and the halved boiled egg attractively on top of the noodles. Sprinkle with sesame seeds for an extra touch of flavor and visual appeal. Add ice cubes if desired for an even colder serving.
Step 8
Your Kimchi Water Cold Noodles are ready! This visually appealing dish offers a delightful combination of the refreshing tang from the aged kimchi and the cool, crisp flavor of the Dongchimi broth and noodles.
Step 9
It’s time to savor this delicious and refreshing Kimchi Water Cold Noodles! Gently mix the noodles and toppings before taking a hearty bite. Prepare to be delighted by a taste that will make you forget the heat!
