Refreshing Mediterranean Cucumber Tomato Salad
A Simple and Delightful Mediterranean Salad Featuring Cucumbers and Tomatoes
Let’s make a wonderfully simple Mediterranean salad with cucumbers and tomatoes. This salad is perfect for a light and refreshing meal, bursting with fresh flavors.
Salad Ingredients- 1/4 Onion, thinly sliced or finely chopped
- 1.5 Cucumbers, quartered lengthwise and sliced
- 20 Cherry Tomatoes, halved
- 1 Cucumber Pepper (optional), seeds removed and finely chopped
- 3 Mini Bell Peppers, seeds removed and thinly sliced
- 60g Feta Cheese, crumbled or cubed
Dressing Ingredients- 1/3 Tbsp Minced Garlic
- 1/3 Tbsp Salt (or to taste)
- 2 Tbsp Lemon Juice
- 3 Tbsp Apple Cider Vinegar (or white wine vinegar)
- 3 Tbsp Olive Oil
- Whole Black Peppercorns, coarsely ground
- 1/3 Tbsp Minced Garlic
- 1/3 Tbsp Salt (or to taste)
- 2 Tbsp Lemon Juice
- 3 Tbsp Apple Cider Vinegar (or white wine vinegar)
- 3 Tbsp Olive Oil
- Whole Black Peppercorns, coarsely ground
Cooking Instructions
Step 1
First, thinly slice or finely chop the onion. Soaking it in cold water for a few minutes can help reduce its sharpness. Drain well. For the cucumbers, quarter them lengthwise and then slice into about 1cm thick pieces. You don’t need to remove the seeds. If you have a cucumber pepper, remove the seeds and finely chop it to add.
Step 2
Prepare the mini bell peppers by removing the seeds and slicing them thinly. Aim to cut all the vegetables into similar-sized pieces for a consistent texture and appealing presentation.
Step 3
Wash the cherry tomatoes thoroughly. Using about 20 tomatoes will add great color and a lovely sweet-tart flavor, but feel free to adjust the quantity based on your preference. If using larger tomatoes, cut them into quarters.

Now, let’s make the vibrant dressing. In a bowl, combine the minced garlic, salt, fresh lemon juice, tangy apple cider vinegar, and good quality olive oil. Whisk vigorously with a fork or a small whisk until well emulsified. This step ensures the dressing coats all the ingredients evenly.
Step 5
Pour the prepared dressing over the mixed vegetables and tomatoes. Gently toss to combine everything. Just before serving, crumble or cube the feta cheese and scatter it over the salad. Finish with a generous grind of whole black peppercorns. (Optional: For an extra touch of richness, drizzle with balsamic glaze or a little more olive oil just before serving.)
