This refreshing miso soup features the natural sweetness of seasonal napa cabbage and plump fresh oysters, offering a clean and invigorating flavor. Perfect for a chilly day, this soup is both comforting and delicious.
Main Ingredients- 1/2 head Napa cabbage
- 500-600g Fresh oysters
- 1 pack Dashi broth pack (or 1.5L Dashi broth)
- 1/2 stalk Green onion
Seasoning & Others- 2 Tbsp Miso paste
- Pinch of Black pepper
- 1 tsp Minced garlic
- 2-3 pcs Korean chili peppers (optional, for a spicier kick)

Cooking Instructions
Step 1
First, gently rinse the fresh oysters under cold water to remove any debris and drain them well in a colander. In a pot, add 2-3L of water and the dashi broth pack. Simmer for 10-15 minutes to create a rich broth. (If you don’t have a dashi pack, you can use anchovy-kelp broth or rice rinse water for a savory flavor.)
Step 2
Wash the napa cabbage thoroughly, shake off excess water, and chop it into bite-sized, thin slices. Slicing the thicker stem parts a bit thinner will make them more tender when cooked.
Step 3
Finely chop the green onion. If your dashi broth pack contains chili seeds and already provides a spicy flavor, you may omit adding extra chili peppers. However, if you are using rice rinse water or a clear broth, adding 2-3 finely chopped Korean chili peppers will enhance the soup’s zestiness.
Step 4
After simmering for 10-15 minutes, remove the dashi broth pack. Dissolve the miso paste (2 Tbsp) into the broth, ensuring there are no clumps. Add the sliced napa cabbage and green onions, and bring to a rolling boil.
Step 5
Carefully add the prepared fresh oysters to the pot. Once the oysters are in, add the minced garlic (1 tsp) and a pinch of black pepper. Simmer for about 5 minutes, or just until the oysters are cooked through. Be careful not to overcook the oysters, as they can become tough.
Step 6
Your delicious miso soup, infused with the refreshing sweetness of napa cabbage and the rich flavor of oysters, is now ready! When seasoned to be mild rather than overly salty, it’s a perfect match for well-fermented kimchi or green onion kimchi, making for a truly delightful meal. Enjoy this comforting dish on a cold day.
