  • 150g fresh oysters
  • 150g fresh bean sprouts
  • 1 stalk green onion (scallion)
  • 1/2 block firm tofu
  • 1 tbsp natural seasoning (anchovy/shrimp/kelp mix) (or 1 handful dried anchovies for broth)

Seasoning

  • 2 Tbsp anchovy sauce
  • 1 Tbsp minced garlic
  • Salt to taste

Cooking Instructions

Step 1

First, let’s make a flavorful broth. If you don’t have dried anchovies for broth, prepare 1 tablespoon of natural seasoning (a mix of anchovies, shrimp, and kelp). In 1300ml of water, add the natural seasoning and simmer over medium-low heat to extract a deep flavor. (If using dried anchovies, add a handful and let it simmer to create the broth.)

While the broth is simmering, let’s clean the fresh oysters. Place 150g of oysters in a bowl and add 1 tablespoon of coarse sea salt. Gently shake the bowl to rinse the oysters; this will help remove any shell fragments or impurities. Carefully pick out any remaining debris, then quickly rinse them under cold water and set aside.

Rinse the bean sprouts thoroughly. Using fresh bean sprouts with intact heads and tails will enhance the texture and flavor of the soup.

Cut the soft tofu into bite-sized pieces. Using softer silken tofu instead of firm stewing tofu will result in a creamier and smoother soup.

Once the broth is boiling, add the prepared bean sprouts and tofu. Oysters can become tough if overcooked, so it’s recommended to add them near the end for a brief cooking time. (You can also add them with the bean sprouts and tofu if you prefer.)

Add 2 tablespoons of anchovy sauce for a savory depth of flavor. You can substitute with Korean soup soy sauce (guk-ganjang) if preferred.
