- 35g Fresh Mulberries
- 1 Tbsp Water
- 30g Unrefined Brown Sugar (for puree)

Cooking Instructions
Step 1
First, let’s prepare a fragrant puree using raspberries and mulberries. In a blender, combine the clean raspberries and mulberries with 1 tablespoon of water. Blend until you achieve a smooth consistency. Transfer this fruit mixture to a thick-bottomed saucepan, add 30g of unrefined brown sugar, and place it over medium-low heat.

Once the mixture begins to simmer, reduce the heat to low and cook for about 3 to 5 minutes, allowing it to thicken slightly. Skim off any foam that rises to the surface for a cleaner puree. Once done, place the saucepan in a bowl of cold water to cool the puree completely.

In a separate mixing bowl, place the softened cream cheese. Beat it with a whisk or electric mixer until it’s smooth and creamy, ensuring there are no lumps. Then, gradually add 30g of unrefined brown sugar and continue whipping until the mixture is well combined, smooth, and glossy. This step is crucial for a velvety mousse texture.
