Super Simple Recipe for a Refreshing and Clean Scallop Soup Using Seasonal Scallops
This is a perfect, simple recipe for a refreshing and clean soup to accompany spicy stir-fried dishes, especially late at night. We’re making a Hong Scallop and Clam Soup, a super easy seasonal dish! Hong scallops are wonderfully plump and sweet right now, making them incredibly delicious.
Ingredients- 700g Hong Scallops
- 700ml Water
- 1/2 stalk Green Onion
- 3 cloves Garlic
- 1 Green Chili Pepper
- 1/2 tsp Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
The first step is always preparation! Since Hong scallops are farmed off the seabed, they don’t require a lengthy purging process for sand. Simply wash them thoroughly with a brush to remove any surface dirt. Finely chop the green onion and green chili pepper.
Step 2
In a pot, combine the cleaned Hong scallops, 700ml of water, chopped green onion, and green chili pepper.
Step 3
Cover the pot and let it boil vigorously for about 10 minutes. This will allow the scallops to open up and release their fresh, savory broth.
Step 4
After boiling for 10 minutes, add 1/2 teaspoon of salt to season the soup to your liking. Finish with a light sprinkle of black pepper for added aroma.

This soup is a wonderful accompaniment to spicy dishes, as it helps to mellow the heat while providing a comforting and complete meal with its delicious broth. It’s also great for adding to rice!
