It’s a nostalgic side dish I often ate as a child, and I make sure to have it every year before midsummer. Rich in dietary fiber and low in calories, you can enjoy it without feeling guilty. Main Ingredients- 1 pack Sea Agar (Umugasari)
- 1 Onion
- 1 Cucumber
- 10cm Spring Onion (Green Onion)
- 1/2 Tbsp Minced Garlic
- 4 Korean Green Chilies (Cheongyang)
- Ice
Seasoning- 5 Tbsp Vinegar
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Oligosaccharide
- 1/2 Tbsp Sugar
- 1/2 Tbsp Salt
- 1 Tbsp Sesame Seeds
- 1/2 Tbsp Gochugaru (Korean Chili Flakes)
- 5 Tbsp Vinegar
- 2 Tbsp Soy Sauce
- 1/2 Tbsp Oligosaccharide
- 1/2 Tbsp Sugar
- 1/2 Tbsp Salt
- 1 Tbsp Sesame Seeds
- 1/2 Tbsp Gochugaru (Korean Chili Flakes)
Cooking Instructions
Step 1
First, rinse the sea agar thoroughly under running water. Cut it into flat, bite-sized pieces. Avoid cutting it too thinly, as the seasoning might not adhere well. Prepare it into a pleasant, manageable size.

Let’s prepare the vegetables. Thinly slice or julienne the cucumber and onion. Finely chop the spring onion and mince the Korean green chilies after removing the seeds to add a spicy kick. If you prefer less heat, you can adjust the amount of chilies or omit them.

Now, place the prepared sea agar into a large bowl. Add the sliced cucumber, onion, spring onion, and the minced garlic. Ensure all ingredients are ready to be mixed together.

Let’s get started on the seasoning. First, add half a tablespoon of gochugaru (Korean chili flakes) for a touch of spiciness and a beautiful color.

Add half a tablespoon of sugar for sweetness. This will complement the oligosaccharide for a glossy finish.

Pour in 5 tablespoons of vinegar for that essential tangy flavor. If you enjoy a more pronounced sour taste, feel free to increase the vinegar amount slightly.

Add half a tablespoon of salt to adjust the overall taste. You can modify the salt quantity according to your preference.

Add 2 tablespoons of soy sauce for a savory depth. Use regular soy sauce, not soup soy sauce.

Finally, add half a tablespoon of oligosaccharide for a glossy sheen and a smooth sweetness. You can also use corn syrup.

Add all the prepared seasoning ingredients to the bowl with the sea agar and vegetables. Gently mix everything with a spatula or your hands, being careful not to mash the ingredients. The key is to coat everything evenly without being too rough. Finish by sprinkling 1 tablespoon of sesame seeds for a nutty aroma. Your salad is now complete!
