This is my daughters’ absolute favorite soup – Snow Crab Doenjang Jjigae! It’s the ultimate soybean paste stew! The star ingredient is pre-cleaned snow crab, which transforms into a truly irresistible doenjang jjigae with its rich flavor! You don’t need to make a separate broth; the soup comes out wonderfully clean and deep. It’s amazing how refreshing the broth tastes! Since the crab is already prepared, it’s incredibly convenient. Ingredients
- 2 prepared snow crabs (cut into 2 pieces each)
- 700ml water
- 2 Tbsp doenjang (Korean soybean paste)
- 1 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp minced garlic
- 1/4 onion
- 1/3 zucchini
- 1/2 green onion
- 1 block firm tofu
- A little red chili pepper
- A little crown daisy
Cooking Instructions
Step 1
First, let’s prepare the vegetables for the doenjang jjigae. Slice the zucchini into thin, fan-shaped pieces about 0.5cm thick. Slice the onion similarly, and cut the green onion diagonally. Cut the block of tofu into approximately 1.5cm cubes. 🙂
Step 2
Rinse the prepared snow crabs thoroughly under running water. Then, place them directly into the pot. Pre-cleaned snow crabs are easily found in supermarkets these days! They require no further preparation other than a quick rinse under running water when you’re ready to cook, making them very convenient. ㅎㅎ
Step 3
Now, pour 700ml of clean water into the pot. Turn on the heat and start bringing it to a boil.
Step 4
Take about 2 generous tablespoons of doenjang and dissolve it gently in the water. It’s important to stir well so the doenjang dissolves completely.
Step 5
Once the soup starts to boil, let it simmer to allow the delicious broth from the snow crabs to fully infuse. The prepared snow crabs act as a natural flavor enhancer, creating a wonderfully rich and savory broth without the need for separate anchovy or kelp stock! This allows you to achieve a refreshingly deep flavor with minimal effort. 🙂

When the soup returns to a rolling boil, add 1 tablespoon of minced garlic and 1 tablespoon of guk-ganjang to season it.
Step 7
Now it’s time to add the tofu and vegetables that can break apart easily. Add the zucchini, onion, and the cubed tofu towards the very end of the cooking process. Be careful not to overcook them, as they can become mushy if boiled for too long.
Step 8
Finally, add the sliced green onion and red chili pepper. Top it off with a generous amount of crown daisy for the perfect finishing touch! Let it simmer for another moment, and your delicious doenjang jjigae will be ready.
