Main Ingredients- 1 serving dried soba noodles (approx. 1 handful)
- 1 piece of daikon radish (about 5cm long)
- 1 handful of shredded green onion (white parts preferred)
- 3 sheets of seasoned seaweed (gim)
- 1 tsp wasabi paste (or to taste)
Chilled Soba Broth- 4 Tbsp udon broth base (tsuyu)
- 1 Tbsp tuna extract (or soy sauce for seasoning)
- 2 Tbsp sugar
- 2 cups cold water (approx. 400ml)

Cooking Instructions
Step 1
First, prepare the daikon radish to be used as a topping. Take a piece of daikon radish about 5cm long and finely grate it. This grated radish will add a refreshing taste and aroma.

Boil the dried soba noodles in plenty of water according to the package instructions. Once cooked, immediately drain and rinse them thoroughly under cold running water to remove excess starch. Drain well. This step ensures the noodles are springy and don’t become mushy.

Now, let’s make the refreshing and flavorful broth. In a bowl, add 4 tablespoons of store-bought udon broth base. This base will add depth to the flavor.

Add 1 tablespoon of tuna extract for an extra layer of umami. If you don’t have tuna extract, soy sauce for seasoning can be a good substitute.

Add 2 tablespoons of sugar to balance the flavors with a hint of sweetness. You can adjust the amount of sugar according to your preference.

Pour in 2 cups (approx. 400ml) of cold water and stir well with a spoon until the sugar is completely dissolved. Taste the broth and adjust if necessary: add more udon base or tuna extract if it’s too bland, or a bit more sugar if you prefer it sweeter.

Almost there! In a serving bowl, arrange the drained soba noodles. Then, generously pour the chilled broth over the noodles.

Gently spoon the grated daikon radish prepared earlier over the noodles. The refreshing essence of the radish will subtly infuse into the broth.

Top with a generous amount of shredded green onions for a crisp texture and fresh aroma. For those who enjoy a little kick, add wasabi paste on the side or directly on top. Adjust the amount of wasabi to your liking.
