Main Ingredients- 15 White Shrimp (Prawns)
- 200g Bean Sprouts
- 1.2L Water
- 1 Green Onion (Scallion)
- 2 Korean Green Chili Peppers (Cheongyang)
- 1 Cube of Broth Base (Coin Stock)
Seasoning- 1 Tbsp Soup Soy Sauce
- 1 Tbsp Fish Sauce (or Tuna Extract)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 3 Tbsp Cooking Wine (Mirin or Rice Wine)
- 0.5 Tbsp Minced Garlic
- Pinch of Salt
- Pinch of Black Pepper
- 1 Tbsp Soup Soy Sauce
- 1 Tbsp Fish Sauce (or Tuna Extract)
- 1.5 Tbsp Gochugaru (Korean Chili Flakes)
- 3 Tbsp Cooking Wine (Mirin or Rice Wine)
- 0.5 Tbsp Minced Garlic
- Pinch of Salt

Step 1
Let’s start by preparing all the necessary ingredients for a delicious Shrimp and Bean Sprout Soup. Using fresh ingredients will ensure a deeper, more satisfying flavor.

For the shrimp, remove the heads and tails, then peel off the shells. Next, use a toothpick to carefully devein them by piercing the back. Rinse the shrimp a few times under cold running water until clean. Properly preparing the shrimp this way makes for a cleaner taste and a more enjoyable dish.

Trim off only the long, scraggly tails from the bean sprouts. Give them a quick rinse under cold water about two times and drain well. It’s important to keep the bean sprouts crisp and crunchy.

Arrange the prepared fresh shrimp on top of the bean sprouts. Add 1 cube of broth base (coin stock) to enhance the soup’s depth of flavor. Cover the pot with a lid and cook over medium heat for about 3 minutes, or until the bean sprouts are tender. It’s best not to overcook the shrimp.

Once the bean sprouts are cooked, remove the lid and bring the heat to high. Let the soup simmer vigorously for about 5 more minutes.
