The perfect antidote to a sweltering summer day when your appetite wanes! Enjoy the invigorating chill of our soba noodles served in an icy broth. This recipe will help you recreate that authentic, professional-quality taste right in your own kitchen!
Broth Ingredients- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce
- 1.5 Tbsp Sugar
- 5 cups Water (1L)
- 1 handful Dried Anchovies (approx. 10-15)
- 1 piece Dried Kelp (Kombu, 5x5cm)
- 1 Dried Shiitake Mushroom
- 1 handful Bonito Flakes (Katsuobushi, approx. 5-10g)
Cooking Instructions
Step 1
Begin by preparing all the ingredients for your soba noodles. Peel the daikon radish and thinly slice the scallions.
Step 2
Using a grater, finely grate the prepared daikon radish. This will add a refreshing element to the broth, enhancing its flavor profile.
Step 3
In a pot, add 5 cups (1L) of water along with the dried anchovies, kelp, and dried shiitake mushroom. Bring to a boil over high heat, then reduce to medium-low and simmer for about 10 minutes to develop a rich broth flavor.
Step 4
Once the broth has infused, remove the kelp immediately. Boiling kelp for too long can result in a bitter taste. Turn off the heat, add the bonito flakes, and let them steep for about 1 minute until the broth darkens in color, then strain them out. Bonito flakes add a wonderful umami depth.
Step 5
Wash and finely chop the scallions to prepare them as a garnish. Feel free to add other toppings like microgreens or shredded nori seaweed if you like.

Carefully strain the broth through a sieve lined with cheesecloth. Using cheesecloth will effectively remove any fine particles, ensuring a crystal-clear and refined broth.
Step 7
To the clarified broth, add 2 Tbsp soy sauce, 1 Tbsp fish sauce, and 1.5 Tbsp sugar. Stir well to combine and adjust the seasoning. Taste and modify the amounts of soy sauce or sugar to suit your preference.

Chill the seasoned broth thoroughly, then place it in the freezer for about 2-3 hours until a light layer of ice forms on the surface (This is best done just before you plan to cook the noodles). When cooking the soba noodles, boil them in plenty of water according to package directions (usually 4-5 minutes). Once cooked, immediately drain them and rinse thoroughly under cold running water to remove excess starch and achieve a perfectly chewy texture.
Step 9
Place the chilled soba noodles in a serving bowl. Ladle a generous amount of the icy broth over the noodles. Garnish with the grated daikon radish, chopped scallions, and a sprinkle of sesame seeds. Your refreshing and delicious soba noodles are now complete! For an extra zesty kick, add a dab of wasabi to your liking.
