Noodle Soup Ingredients

  • 2 servings of somen noodles (approx. 200g)
  • 2 hard-boiled eggs
  • Plenty of cold ice cubes
  • A pinch of salt for seasoning noodles (optional)

Cooking Instructions

Step 1

First, let’s boil the eggs that will be used as a topping. Fill a pot with plenty of water, add the eggs, and boil them until fully cooked or to your desired doneness. (Boiling for about 10-12 minutes yields hard-boiled eggs.)

Step 2

Now, it’s time to cook the somen noodles to a chewy perfection. In a large pot, bring ample water to a rolling boil. Add a tiny pinch of salt to prevent the noodles from sticking and to add a subtle flavor. (This also helps prevent the noodles from becoming mushy.) Once boiling, add the somen noodles and stir gently to prevent them from clumping together as they cook. Cooking them for 1-2 minutes less than the package instructions will result in a chewier texture. (Typically, they cook in about 3-4 minutes.)
