Refreshing & Tangy Seaweed and Sea Vegetable Bibim Guksu
Summer Delight: A Light and Delicious Meal with Healthy Seaweed & Sea Vegetable Noodles
On hot summer days, don’t you crave noodles instead of rice? Instead of high-flour noodles, try this special bibim guksu using healthy seaweed noodles! Seaweed and kelp are rich in dietary fiber, which helps prevent constipation and keeps you feeling full, making them excellent for dieting. The seaweed noodles in this recipe don’t require boiling – simply rinse them, and they’re ready to eat, making this a quick and easy summer dish.
Main Ingredients
- Seaweed noodles (Miyeok Guksu) 180g (1 pack)
- Beef brisket or flank steak 150g
- 1/2 Onion
- 30g Carrot
- 30g Yellow bell pepper
- 20g Red bell pepper
- Assorted fresh vegetables (lettuce, cucumber, etc.) to taste
Sweet & Spicy Bibim Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oligodang (corn syrup) or mulyeot (corn syrup)
- 1 Tbsp Deulgireum (perilla oil)
- 1 Tbsp Toasted sesame seeds, crushed
Optional Ingredients & Substitutions
- Add perilla oil or sesame oil to taste
- Chicken breast instead of beef, or beef marinated and grilled with soy sauce/oyster sauce
- 1-2 Boiled eggs
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oligodang (corn syrup) or mulyeot (corn syrup)
- 1 Tbsp Deulgireum (perilla oil)
- 1 Tbsp Toasted sesame seeds, crushed
Optional Ingredients & Substitutions
- Add perilla oil or sesame oil to taste

- 1-2 Boiled eggs
Cooking Instructions
Step 1
First, pat the beef brisket dry with paper towels. Season with salt and pepper, and let it marinate for about 10 minutes. This will help tenderize the meat and enhance its flavor.
Step 2
Heat a non-stick pan over medium-low heat without oil. Grill the marinated beef on both sides until nicely browned. Cooking over medium-low heat ensures the juices stay locked inside, keeping the meat moist. This is a great way to enjoy fresh beef when you’re tired of chicken!
Step 3
Thinly slice the onion and soak it in cold water for at least 10 minutes to remove its sharp, pungent flavor. This will keep the onion crisp while making it milder. Julienne the yellow and red bell peppers and the carrot into similar sizes. If you have a fresh cucumber on hand, thinly slicing and adding it will provide an extra refreshing crunch.
Step 4
Gently rinse the seaweed noodles under running water. Most seaweed noodles are processed to be ready for consumption after rinsing, so there’s no need to boil them. Drain them thoroughly in a colander.
Step 5
In a bowl, combine all the bibim sauce ingredients: gochujang, oligodang, deulgireum, and crushed sesame seeds. Mix well until the sauce is evenly blended. If you’re adding a lot of vegetables and are worried about the flavor being too mild, you can add about 1/2 Tbsp of soy sauce to adjust the seasoning. (I found the seasoning just right as is!)
Step 6
Place the drained seaweed noodles in a large bowl. Arrange the fresh vegetables and the delicious grilled beef on top. Spoon the flavorful bibim sauce generously into the center. Your refreshing and tangy Seaweed and Sea Vegetable Bibim Guksu is ready to enjoy – perfect for when you lack appetite!
