  • 2 Tbsp Olive Oil
  • 2 Tbsp Honey
  • 1 cup Cider
  • 1 cup Ice Cubes
  • 3 Ripe Tomatoes

First, prepare 3 ripe tomatoes. Remove the stem from each tomato. To make peeling easier, score the skin by making a shallow cross-shaped cut on the top of each tomato with a knife. This little score mark will help the skin peel off cleanly later.

Bring a pot of water to a rolling boil. Once the water is boiling, carefully add the scored tomatoes and blanch them for about 1 minute. Be careful not to over-blanch, as this can make the tomatoes too mushy and affect the taste. Aim for just enough time to loosen the skin.

After blanching, briefly rinse the tomatoes under cold water to cool them down slightly. Then, gently peel the skin away, starting from the cross-shaped cut you made. You’ll find the skin slips off quite easily.

Once peeled, remove any remaining core from the tomatoes and cut them into manageable pieces. Now, get your blender ready! Add the prepared tomato pieces, 2 tablespoons of olive oil, 2 tablespoons of honey, 1 cup of refreshing cider, and 1 cup of ice cubes to the blender. Secure the lid tightly and blend on high speed for about 30 seconds to 1 minute, or until all ingredients are smooth and well combined. Adding cider gives the juice a wonderful effervescence and a crisp, clean finish.
