Refreshing Water Kimchi with Field Mint
Seasonal Delight: How to Make Field Mint Water Kimchi
With the recent increase in fine dust, field mint is known to be highly effective in expelling toxins from the body. So, I decided to make this refreshing Water Kimchi with Field Mint! It’s a perfect way to enjoy the fresh flavors of spring while boosting your health.
Main Ingredients- A handful of fresh field mint
- A handful of sour and sweet stone dropwort (Sedum)
- 1/2 crisp apple
- 5 stalks of pungent green onions
- 5 cloves of aromatic garlic
- A little sweet carrot
Water Kimchi Broth- 2L water
- 3 Tbsp gochugaru (Korean chili powder)
- 1/4 cup plum extract
- 1/2 tsp sugar
- 3 Tbsp coarse sea salt
- 2L water

Cooking Instructions
Step 1
Carefully pick a handful of fresh field mint that has grown well. It’s best to use the tender leaves that are not too tough.
Step 2
Wash and prepare all the vegetables for the water kimchi. Using fresh ingredients is key to a delicious outcome.
Step 3
Core the apple and slice it thinly. Julienne the carrot. Cut the green onions into 4-5 cm lengths. Slice the garlic thinly or mince it. Ensure each ingredient is cut into bite-sized pieces.
Step 4
In a small bowl, soak 3 tablespoons of gochugaru in cold water. This step helps the chili powder dissolve smoothly, resulting in a clear and vibrant broth.
Step 5
After soaking the gochugaru for about an hour, strain it through a fine-mesh sieve to extract only the clear liquid. Alternatively, you can use a fine cloth or a dedicated broth bag for easy straining.
Step 6
In a large mixing bowl, combine 2L of water with the strained gochugaru liquid, plum extract, sugar, and coarse sea salt. Stir well to create the delicious water kimchi broth. You can adjust the sugar and salt to your taste.
Step 7
Add the prepared field mint, stone dropwort, apple, carrot, green onions, and garlic to the kimchi broth. Gently mix everything together.
Step 8
Pour enough kimchi broth over the ingredients so that they are just covered. If it seems too thick, you can add a little more water. Gently toss to combine, then transfer to a container and refrigerate. It tastes even better after resting for about a day in the refrigerator. Enjoy this refreshing and healthy dish!
