Refreshing Winter Greens and Chives Salad (Gyeoulcho Buchu Muchim)

With local open-air markets temporarily closed due to the coronavirus, it’s hard to feel the vibrant arrival of spring. I miss the fresh greens typically found there. Fortunately, I recently visited a market and bought a bunch of winter greens (gyeoulcho) and chives. I’ve been using them in soups, side dishes, and various recipes, and they bring such a refreshing taste. This recipe transforms these simple spring vegetables into a wonderfully flavorful salad that will brighten up any meal. Enjoy the taste of spring with this delightful combination!

Main Ingredients

  • 3 handfuls Winter Greens (Gyeoulcho) (approx. 150-180g)
  • 1 handful Chives (approx. 50-70g)
  • 1/2 Onion (approx. 50g)

Cooking Instructions

Step 1

Start with a fresh bunch of winter greens (gyeoulcho). A typical bunch is quite generous, so you can set aside what you need for this recipe.

Inspect the winter greens. Trim off any yellowed or wilted leaves and gently clean the root ends. Cut the greens into manageable lengths, about 5cm (2 inches) long. Then, rinse them thoroughly under cold running water several times to remove any dirt or debris. Drain them well in a colander.

Place about 3 generous handfuls of the prepared and drained winter greens into a large mixing bowl. This amount will make a substantial serving of salad.

Thinly slice half an onion into julienne strips and add it to the bowl with the winter greens. Pour 6 tablespoons of clear anchovy sauce over the vegetables. Gently mix them together with your hands. Let this mixture sit for about 5 minutes to allow the greens to soften slightly and begin to absorb the flavor of the anchovy sauce.

Now, add the remaining seasoning ingredients. Include 3 tablespoons of red pepper flakes, 1 tablespoon of minced garlic, 3 tablespoons of vinegar for a tangy kick, 1 tablespoon of sweet plum extract, 1/2 tablespoon of sugar, 1 tablespoon of fragrant sesame oil, and finally, 1 tablespoon of crushed toasted sesame seeds for nutty flavor.

Lastly, add the bunch of chives, cut into approximately 5cm (2-inch) lengths. Gently toss everything together until well combined. Be careful not to overmix, as this can make the chives taste too strong. Ensure all the ingredients and seasonings are evenly distributed.
