Aglio e Olio spaghetti that everyone from kids to adults will love, surprisingly easy to make! This is a wonderful dish that you can prepare simply.
Main Ingredients- 150g Spaghetti
- 10 Fresh Shrimp
- 10 cloves Garlic
- 20g Dried Vietnamese Chili Peppers (or chili peppers to your preference)
- 20g Fresh Broccoli
- 20g Fresh Mushrooms (e.g., button, king oyster)
Sauce & Seasoning- 80g High-Quality Extra Virgin Olive Oil (enhances flavor)
- 1/2 tsp Salt (add a little to the pasta water too)
- 1/2 tsp Ground Black Pepper (freshly ground is recommended)

Cooking Instructions
Step 1
First, thinly slice the garlic cloves to allow their flavor to infuse well. Cut the broccoli into bite-sized florets, and slice the mushrooms to a manageable size. Peel and devein the shrimp, then clean them thoroughly.
Step 2
Bring a large pot of water to a rolling boil. Add a pinch of salt (not from the measurement) to the water to make it lightly seasoned. Add the spaghetti and cook for about 10 minutes, or 1-2 minutes less than the package instructions, ensuring it’s ‘al dente’ (firm to the bite).
Step 3
In a large pan, pour all 80g of olive oil. Add the thinly sliced garlic and dried Vietnamese chili peppers. Cook over low to medium-low heat, allowing the garlic aroma to fully infuse into the olive oil. Stir occasionally to prevent the garlic from burning, until it turns a light golden brown.
Step 4
Once the garlic aroma is well-developed, add the prepared shrimp and broccoli to the pan. Sauté together until the shrimp turn pink and the broccoli is slightly tender. Add the mushrooms you prepared earlier and sauté with the other ingredients.
Step 5
Drain the cooked spaghetti and add it directly to the pan. Add the measured 1/2 tsp of salt and 1/2 tsp of ground black pepper. Pour in about one ladleful of the pasta water. Toss everything together vigorously over medium heat until the ingredients are well combined and the sauce coats the pasta.
Step 6
Your delicious Aglio e Olio spaghetti, with its wonderful aroma and flavor, is now complete! Serve immediately while hot. For an extra touch, you can sprinkle with chopped parsley or grated Parmesan cheese.
