Steak Ingredients

  • Pork neck, 3 thick slices (approx. 3cm thickness)
  • Lettuce (e.g., iceberg or romaine), 1 head
  • Fresh eggs, 2

Pork Neck Sauce

  • Soy sauce, 3 Tbsp
  • Oyster sauce, 3 Tbsp
  • Sugar, 1 Tbsp
  • Oligosaccharide (or corn syrup), 2 Tbsp
  • Soju (or cooking wine), 2 Tbsp
  • Black pepper, a pinch
  • Steak sauce, 4 Tbsp
  • Water, 150ml (approx. 3/4 cup)

Pork Marinade

  • Minced garlic, 1 Tbsp
  • Olive oil, 2 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Prepare the pork neck steaks. Aim for thick cuts, about 3cm (1.2 inches), as this ensures a juicy and tender steak.

Gently pat the pork neck slices dry with paper towels to remove excess moisture. Then, score the surface of the meat with a knife in a crosshatch pattern. This helps the marinade penetrate better and tenderizes the meat.

Apply the marinade ingredients: minced garlic, olive oil, and black pepper. Rub them evenly over both sides of the pork neck. Let it marinate for about 10 minutes to infuse flavor and reduce any porky smell.

Then, reduce the heat to medium, allowing the sauce to coat and simmer with the pork. In the final stages, lower the heat to ‘low’ and continue cooking, checking the steak’s doneness, until the sauce has nicely glazed the meat.
